Why You’ll Love This Million Dollar Chicken Casserole Recipe

This million dollar chicken casserole is quick and easy, coming together in under an hour with simple ingredients like tender chicken (or leftover chicken), cream cheese, Greek yogurt, gluten-free crackers, a variety of spices, and yummy cheeses. It’s incredibly family-friendly, with a creamy, cheesy filling and a crunchy topping that my babies love.

Ingredient Notes

recipe ingredients in small bowls and labeled.

Casserole

  • Rotisserie chicken: The star of this dish, offering tender, juicy bites without the prep work—feel free to use leftover chicken.
  • Cream cheese: Softened to room temperature for smooth mixing. Use a dairy-free version if needed.
  • Cottage cheese: Brings a light, tangy creaminess to the mix, but dairy-free yogurt works beautifully for a smoother option.
  • Mozzarella cheese: Melts to gooey perfection, giving the casserole that irresistible cheesy bite—dairy-free shredded cheese can also do the trick! Add a sprinkle of cheddar cheese or parmesan cheese for more flavor.
  • Greek yogurt: Helps bind everything together while keeping it creamy. Dairy-free yogurt makes a great substitute here.
  • Green onions: Adds a subtle onion flavor and a fresh pop of color.
  • Garlic powder: Adds a warm, garlicky touch.
  • Onion powder: Provides depth and savory flavor without the texture of fresh onions.
  • Poultry seasoning: Adds a blend of herbs that makes the dish so delicious.
  • Parsley: Brings freshness and adds some color to the casserole.
  • Salt and black pepper: Simple but essential to season all the flavors perfectly—adjust to taste!
  • Gluten-free crackers: Crushed and crispy, they create a crunchy topping that’s just so satisfying; Simple Mills almond crackers are my go-to.
  • Unsalted butter: Ensures the crackers turn golden and perfectly crispy. Use vegan butter if needed.
  • Cooked bacon: Adds a smoky, salty crunch that takes this dish over the top!
  • Fresh parsley and green onions: The beautiful finishing touch!

Cream of Chicken Soup

  • Chicken broth: Forms the flavorful base of the creamy soup.
  • Milk: Helps make the soup creamy—use your favorite dairy-free milk if you’re keeping it lactose-free.
  • Butter: Makes the soup rich and silky; vegan butter is a great alternative.
  • Gluten-free or all-purpose flour: Thickens the soup to the perfect consistency for that classic casserole feel.
  • Salt and black pepper
