This easy Dorito casserole recipe is a new family favorite! Ground beef seasoned with taco spices, Greek yogurt, onions, and salsa, then layered with crunchy Doritos (using Siete’s healthier nacho cheese option) and shredded cheese. A quick gluten-free weeknight dinner the whole family will love!

What Makes This Recipe Great
I am on a mission to make all of our family’s favorite casserole recipes healthier but still delicious! This cheesy Dorito Casserole Recipe is my latest comfort food made healthy recipe and I am absolutely blown away!
Ground beef seasoned with taco spices, Greek yogurt, onions, and salsa, then layered with crunchy Doritos (using Siete’s healthier nacho cheese option) and shredded cheese. Topped with everyone’s favorite taco toppings and served warm. The flavor, the crunch, the cheesy goodness.
I loved it, my kids loved it, and I felt so good about the ingredients and nutrition. It’s a protein-packed, heart casserole that will fill everyone’s bellies AND taste delicious! Perfect for a creative spin on Taco Tuesday or any night of the week.
Ingredient Notes
- lean ground beef: Feel free to use ground turkey or ground chicken if desired. A leftover rotisserie chicken would work well if you’re short on time.
- packet of taco seasoning: Use a storebought packet or my homemade taco seasoning.
- yellow onion
- Greek yogurt
- shredded Mexican cheese: Or cheddar cheese.
- chunky salsa or Rotel tomatoes
- beef broth
- Siete Nacho Cheese Chips: This is a healthier alternative to nacho cheese Doritos! Same delicious flavor with better-for-you ingredients. Alternatively, you can use your favorite tortilla chips, or even a cool ranch flavor if that’s more your style.
- green onions
- garnish: cilantro, diced tomatoes, avocado, and Greek Yogurt or sour cream. Adjust with your favorite toppings!
Step-by-Step Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a large skillet add the oil, cook the ground beef and onion over medium heat until the beef is no longer pink and the onion is soft and translucent. Drain any excess grease.
- Stir in the beef broth, taco seasoning mix, Greek yogurt and salsa. Let it simmer for a few minutes until the flavors meld together.
- 3 layers: Spread half of the crushed Doritos in an even layer on the bottom of the prepared baking dish. Spoon some of the beef mixture over the layer of Doritos followed by 1 cup of shredded cheese. Repeat this layer a second time. On the third layer, leave off the last layer of crushed chips but do add the shredded cheese. You will add the rest of the crushed chips in the last 5 minutes.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly.
- Remove the foil and add the remaining crushed chips. Bake uncovered for an additional 5-6 minutes, or until the cheese is melty. Once done, let the casserole cool for a few minutes before serving.
- Serve hot, optionally garnished with chopped tomatoes, sliced green onions, chopped cilantro, avocado, black olives, and Greek yogurt.
