Healthier Dorito Casserole Recipe
This easy Dorito casserole recipe is a new family favorite! Ground beef seasoned with taco spices, Greek yogurt, onions, and salsa, then layered with crunchy Doritos (using Siete’s healthier nacho cheese option) and shredded cheese. A quick gluten-free weeknight dinner the whole family will love!

Casserole
- 2 lbs ground beef lean
- 1 packet taco seasoning or 2-3 tbsp of my homemade mix
- 1 small onion diced
- 1 cup Greek yogurt
- 3 cups shredded Mexican cheese
- 1 cup chunky salsa
- 2 tbsp beef broth
- 4-4.5 cups loosely crushed Siete Nacho Cheese Chips divided (I use 2-5 oz bags)

- green onions
- cilantro
- diced tomatoes
- Greek yogurt
Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
In a large skillet add the oil, cook the ground beef and onion over medium heat until the beef is no longer pink and the onion is soft and translucent. Drain any excess grease.
Stir in the beef broth, taco seasoning mix, Greek yogurt and salsa. Let it simmer for a few minutes until the flavors meld together.
3 layers: Spread half of the crushed Doritos in an even layer on the bottom of the prepared baking dish. Spoon some of the beef mixture over the layer of Doritos followed by 1 cup of shredded cheese. Repeat this layer a second time. On the third layer, leave off the last layer of crushed chips but do add the shredded cheese. You will add the rest of the crushed chips in the last 5-10 minutes.
Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly.
Remove the foil and add the remaining crushed chips. Bake uncovered for an additional 5-6 minutes, or until the cheese is melty. Once done, let the casserole cool for a few minutes before serving.
Serve hot, optionally garnished with chopped tomatoes, sliced green onions, chopped cilantro, avocado, black olives, and Greek yogurt.

- Additional ingredients: As with most casserole recipes, this dish is customizable to your flavor, spice, and ingredient preferences. Feel free to use hot or mild salsa, and add additional veggies like bell peppers, drained corn, black beans, green chiles, etc.
