A low-carb, keto-friendly vegetable turned creamy mashed potatoes dupe! Who knew that keto mashed cauliflower tasted just like regular mashed potatoes, without all the carbs?!

I absolutely love finding healthy kitchen hacks that make food still feel fun and yummy, but with a healthy twist, and this recipe is exactly that! All you need is 5 main ingredients and 15 minutes, and the resulting low-carb cauliflower mash is so delicious. 

Potatoes are the perfect side dish because they really go with everything. For this keto mashed cauliflower recipe, the same thing applies. Serve it with pot roast or steak, pour gravy over it, or add it to classic comfort food recipes. The options are endless!

Ingredient Notes

  • cauliflower rice: I used 2 bags of riced cauliflower. You can also you 1 head of cauliflower or a bag of cauliflower florets, chopped-boiled or steamed.
  • ghee: Or use the vegan butter of your choice. 
  • garlic powder
  • chives: fresh or dry)
  • coconut milk: or any unsweetened, non-dairy milk you prefer. 
  • salt & pepper: add more to taste if needed)
  • optional: dairy-free sour cream* or dairy-free cream cheese. Brands like Forager or Kite Hill make great options. 

Recipe Step by Step

  1. Bring 1 head of cauliflower chopped or 2 bags of cauliflower rice to a boil, about 10 minutes. If you want to use the microwave, cook the cauliflower according to the instructions on the bag. 
  2. Drain the liquid and add the cauliflower to the food processor with garlic powder, chives, ghee, coconut milk, dairy-free sour cream salt, and pepper.
  3. Blend together until smooth and top with fresh chives. Make sure to NOT over-blend or it will turn into a soupy puree.
  4. Sprinkle your creamy mashed cauliflower with additional chives and dairy-free or regular parmesan cheese if desired.

Mac’s Pro Tips

  • If you don’t have a food processor, an immersion blender will work well too. 
  • If you aren’t dairy-free, feel free to use regular dairy products like heavy cream, cream cheese, and butter in place of the non-dairy ones. 
  • If you’d like to steam your cauliflower instead of boiling it, that works too. I just find that boiling works faster. 
  • Use this keto cauliflower mash as a replacement for any recipe that calls for mashed potatoes! It’s truly so similar!

15 Minute Creamy Keto Mashed Cauliflower

With simple ingredients and 15 minutes, you’ll have a just-as-good-as-mashed-potatoes side dish that’s only 5 grams of net carbs per serving. Creamy, smooth, and delicious, this keto mashed cauliflower goes with everything!
Prep Time: 5 minutes
Cook Time: 10 minutes
Servings: 6 servings

Ingredients  

  • 2 12oz bags cauliflower rice (or 1 head of cauliflower, chopped-boiled or steamed)
  • 2 tsp ghee
  • 1/2 tsp garlic powder
  • 1 tbsp chives fresh or dry
  • 2 tbsp coconut milk
  • 2 1/2 tablespoons dairy-free sour cream*
  • 1 tsp salt add more to taste if needed
  • 1/4 tsp pepper add more to taste if needed

Instructions 

  • Bring 1 head of cauliflower chopped or 2 bags of cauliflower rice to a boil, about 10 minutes. You can also cook the 2 bags in the microwave according to the bag instructions.
