These Taco Stuffed Sweet Potatoes are everything you love about tacos stuffed into a sweet and tender potato! A quick and easy recipe full of protein, veggies, and healthy carbs.
What Makes This Recipe Great
I’ve made my fair share of stuffed pepper recipes (see these Southwest Stuffed Peppers, these Buffalo Chicken Stuffed Peppers, and this Stuffed Pepper Soup), but I recently tried my hand at stuffing sweet potatoes, and OMG! This Mexican-inspired recipe features tender sweet potatoes stuffed with all of your favorite taco fillings and toppings!
What I love about these Taco Stuffed Sweet Potatoes is that however you take your tacos is exactly how you can prepare these sweet potatoes. The toppings and mix-ins are entirely up to your tastes and preferences! Make a “taco bar” with the sweet potato base and let everyone stuff and create their own with their favorite taco toppings.
This delicious taco night recipe is also gluten-free thanks to being flour tortilla free, and can be made dairy-free with the use of dairy-free sour cream!
Ingredient Notes
- sweet potatoes
- ground beef or ground turkey
- taco seasoning: Use a store-bought packet or make my easy homemade taco seasoning made with cumin, chili powder, salt, black pepper, paprika, garlic powder, onion powder, and oregano.

Step-by-Step Instructions
Taco Meat
- Heat a large skillet over medium heat, along with a tbsp of olive oil. Add in the onions and garlic and sauté for 2 minutes.
- Add the ground beef to the skillet and brown it for about 8-9 minutes or until the meat is cooked through. Drain any excess fat.
- Add the tomato sauce along with taco seasoning and mix together. Allow to simmer on low heat for about 3 minutes.
Sweet Potatoes
- Preheat oven to 400F. Line a large baking sheet with parchment paper or foil. Set aside. Wash and dry sweet potatoes. Using a fork, poke several holes around each potato.
- Cover each sweet potato with olive oil and coarse sea salt. Gently rub and make sure each potato is coated.
- Place the potatoes on the prepared baking sheet and bake for 45-50 minutes or until it is soft to the touch. Microwave Method: Using a fork, poke several holes in around each potato and wrap it in a paper towel. Cook each potato for 4-6 minutes.
Assembly
- In a small bowl, add the sour cream and lime juice. Mix until combined.
- Cut a slit down the middle of each sweet potato and stuff with the prepared taco meat. Top each one with chopped tomatoes, chopped onions, and guacamole. Drizzle with the sour cream and lime sauce. Garnish with cilantro and jalapeno slices.

Easy Taco Stuffed Sweet Potatoes Recipe

- 1/3 cup chopped tomatoes
- 1/3 cup guacamole
- 1/2 cup sour cream regular or dairy free
- 1/2 lime
- Cilantro and jalapeños slices for garnish
