Easy Taco Stuffed Sweet Potatoes Recipe

Ingredients

  • 4 medium sweet potatoes
  • 1-1.5 pounds ground beef or turkey
  • 2-3 tbsp homemade taco seasoning
  • 1/2 large yellow onion diced
  • 3 cloves garlic minced
  • 1 tbsp. olive oil
  • 1 1/4 cup tomato sauce

Toppings

  • 1/3 cup chopped red onions
  • 1/3 cup chopped tomatoes
  • 1/3 cup guacamole
  • 1/2 cup sour cream regular or dairy free
  • 1/2 lime
  • Cilantro and jalapeños slices for garnish

Instructions

Taco Meat

  • Heat a skillet over medium heat, along with a tbsp of olive oil. Add in the onions and garlic and sauté for 2 minutes.
  • Add the ground beef to the skillet and brown for about 8-9 minutes or until meat is cooked through. Drain any excess fat.
  • Add the tomato sauce along with taco seasoning and mix together. Allow to simmer on low heat for about 3 minutes.

Sweet Potatoes

  • Preheat oven to 400F. Line a large baking sheet with parchment paper or foil. Set aside. Wash and dry sweet potatoes. Using a fork, poke several holes around each potato.
  • Cover each sweet potato with olive oil and coarse sea salt. Gently rub and make sure each potato is coated.
  • Place the potatoes on the prepared baking sheet and bake for 45-50 minutes or until it is soft to the touch. Microwave Method: Using a fork, poke several holes in around each potato and wrap in a paper towel. Cook each potato 4-6 minutes.

Assembly

  • In a small bowl add in the sour cream and lime juice. Mix until combined.
  • Cut a slit down the middle of each sweet potato and stuff with the prepared taco meat. Top each one with chopped tomatoes, chopped onions, and guacamole. Drizzle with the sour cream and lime sauce. Garnish with cilantro and jalapeno slices.

Storage Tips

Store leftovers in separate airtight containers in the fridge, then reheat and assemble, adding your favorite toppings last.
