Easy Ribeye Steak Sandwich with Grilled Onions

This grilled ribeye steak sandwich recipe is loaded with grilled onions, two kinds of melted cheese, and my famous Mac’s awesome sauce on a ciabatta bun for a tasty, tender, easy-to-make sandwich!

I don’t know about you, but there is nothing better than a good sandwich recipe. And boy, have I got the most delicious recipe to share with you! 

My Ribeye Steak Sandwich recipe features perfectly tender, sliced ribeye steak, grilled onions, melted provolone and mozzarella cheese, arugula, my famous Mac’s awesome sauce, between two deliciously toasted slices of ciabatta. 

It’s mouthwateringly tender, juicy, and flavorful! Even better, it’s quick and easy, with simple ingredients, and takes just 15 minutes to make!

Ingredient Notes

  • Ribeye Steak: I made this with Ribeye, but you can choose your favorite cut of steak. See tips & tricks below for how to pick the perfect steak. 
  • Yellow Onion: You can also use sweet onion if preferred. 
  • Butter: I recommend using a stick of butter, but feel free to use whatever you have on hand. 
  • Mozzarella & Provolone Cheese: I like to add slices of provolone cheese and mozzarella. Feel free to substitute for crumbled blue cheese, gorgonzola, or even white cheddar if you prefer. 
  • Arugula
  • Ciabatta Bread: I think ciabatta is the best bread for this sandwich because it’s thick and fluffy with a nice crispy crust. Feel free to substitute this for your favorite bread roll. 
  • Mac’s Awesome Sauce: I serve my ribeye sandwich with my homemade Mac’s Awesome Sauce, which is SO delicious and perfect for this sandwich. 
  • Salt and Pepper: Season to taste with salt and black pepper. 

Step-by-Step instructions

Cook the Steak

  1. Season the steak generously with salt.  Heat a large pan or cast iron skillet over medium heat. 
  2. When the pan is hot but not smoking, place the Ribeye in the skillet, cook for 3-4 min, then turn and cook another 3-4 min for medium, or until desired doneness.
  3. In the last 30 seconds of cooking, add 1 tablespoon of butter and baste. 
  4. Let rest for 10 minutes and then slice against the grain of the meat.

Cook the Onions

  1. Add 1 tablespoon of butter or olive oil to a hot skillet with the onions (and mushrooms if you choose to make them) and cook down for about 5-7 minutes. Set aside.

Toast the Bread

  1. Preheat the oven to 350 degrees. Cut the ciabatta in half.
  2. Add the cheese to one side of the bread and place in the oven until the cheese is melted and both sides of the bread are toasted. 

Assemble

  1. Add a big scoop of Mac’s Awesome Sauce, and one slice of bread, then build your ribeye steak sandwich with the steak, arugula, and onions. Enjoy!

Expert Tips

Cooking Methods: I made this over the stovetop on a skillet, but you could also grill your steak on a gas or charcoal grill or place it in the oven to broil. 

Temperature: I recommend using an instant-read meat thermometer to cook your steak to the desired temperature.

  • Medium Rare: 130 degrees F
  • Medium: 140 degrees F
  • Medium-Well: 150 degrees F
  • Well Done: 160 degrees F

Sauces: You can also serve this with a simple garlic aioli by adding minced garlic or garlic powder to mayo and mixing until combined. Or use steak sauce, Worcestershire sauce, or horseradish if you prefer something with more kick. 

How to Pick the Best Steak: I recommend ribeye for this steak sandwich because it’s really tender. You can also use NY strip, Tri-Tip, or another cut, but keep in mind that some cuts are tougher than others (flank steak and skirt steak are tougher). I recommend noting the USDA grade of the beef you choose. Prime and Choice will be your best options. 

Serving Tips

  • Toppings: In addition to the grilled onions, you can add other toppings as well, such as sauteed mushrooms, tomato, lettuce, banana peppers, and more. Whatever suits your flavor preferences. 
  • Mac’s Awesome Sauce: You can make the awesome sauce ahead of time and store it in a small bowl with a lid in the refrigerator until ready to serve. It works well with so many different dishes and keeps well if stored properly. 

Storage Tips

  • Store leftover steak in an airtight container for up to 3 days. Reheat over the stovetop, microwave, or oven. 
  • Store sandwich ingredients separately, unassembled, and assemble according to the instructions above when ready to eat.

The best way to cut the steak for this ribeye steak sandwich is to cut it against the grain in thin slices. I recommend using a good knife to cut the steak, as it can be tougher to get thin slices with a dull knife. 

Can I use a different cut of steak for this sandwich?

Yes! You can also use New York strip, Tri-Tip, or another cut, but keep in mind that some cuts, like Flank steak and Skirt steak, are tougher than others.

  • 1 8 oz ribeye steak
  • 1 small yellow onion
  • 2 tablespoons butter divided
  • 2 slices mozzarella cheese
  • 2 slices provolone cheese
  • 1 handful arugula
  • 2 pieces ciabatta bread
  • 1/4 cup Mac's Awesome Sauce

Instructions
