TikTok is such a fun way to find new food trends, and we just never know why or when something will go viral. This cucumber & bell pepper salad took off, and it’s easy to see why. Fresh, simple ingredients, sweet and spicy dressing, and a savory seasoning to finish it off. 

If you didn’t know already, cucumbers and bell peppers pack a ton of nutrients, so this salad is absolutely delicious and a great way to get much-needed vitamins and minerals! You’ll be eating it all summer long (and so will I!).

Ingredient Notes

  • Persian cucumbers: This is the mini cucumbers variety. They have thin skin and the perfect crunch! Plus, they’re small, so they’re perfectly bite-sized when sliced. Feel free to use whatever variety of fresh cucumbers you have on hand. Keep in mind that English cucumbers are larger and have thicker skin.
  • Mini sweet bell peppers: I used a variety of red peppers, orange peppers, and yellow peppers. Feel free add green bell peppers to the mix as well.
  • Chili oil: I used the brand Fly By Zing. 
  • Ginger Sesame Dressing: I used Bragg’s. If you can’t find the Braggs dressing, feel free to use any Asian sesame dressing. 
  • Everything But The Bagel Seasoning: You can find this at Trader Joe’s. Use more or less to taste. 

Step-by-Step Instructions

  1. Slice the fresh vegetables: Cut the cucumbers and bell peppers into thin circles. 
  2. Add all ingredients to a large bowl and combine. 
  3. Chill for 30 minutes before serving. Lasts up to 4 days in the refrigerator.

Expert Tips

  • Feel free to use any Asian sesame dressing you like. There are tons of options at most local grocery stores. I used Bragg’s.
  • Everything But the Bagel seasoning is carried by Trader Joe’s. If you don’t have a store near you, check your local supermarket, as many brands make similar alternatives. 
  • Adjust seasonings, chili sauce, and dressing to taste. It’s easier to add more, so start with less and add as you taste.
  • To make this a stand-alone meal, add cooked chopped chicken breast or rotisserie chicken and/or your favorite cooked pasta shape. Bow tie, macaroni, fusilli, or penne would work really well!
  • Feel free to add ingredients and make this refreshing side dish your own! Other ingredients to consider would be chopped green onions, red onion, cherry tomatoes or grape tomatoes, creamy avocado, feta cheese, and/or red pepper flakes (for added spice!).
  • If you don’t like spice, swap the chili oil for regular olive oil.

Serving Tips

  • 6-7 mini bell peppers organge, red, yellow (sliced)
  • 2 tablespoons chili crisp oil I use Fly By Zing
  • 1/4 cup Ginger Sesame Dressing* (I used Braggs)
  • 2 1/2 teaspoons Everything But The Bagel Seasoning (add more to taste)

    So happy to discover your blog from a random suggestion from IG. I made this tonight. Made 1/2 the recipe (just me) and because I’m a weeny, I cut back on the chili oil but ended up with just enough heat for me. I did toss in some small spaghetti noodles, as it was a side dish for my red snapper. I love this and canNOT wait to taste it tomorrow when the flavors have had time to come together!
