Fresh Peach & Burrata Salad Recipe (with Prosciutto)

This tomato peach burrata salad recipe features a combination of creamy burrata cheese, sweet peaches, spicy arugula, spinach, tomatoes, fresh herbs, pine nuts, and sliced prosciutto. Plus, a honey dijon dressing that’s out of this world!

What Makes This Recipe Great

Summer means peach season, and if you haven’t noticed yet, I am all about peach recipes (see my new Spicy Peach Margarita Mocktail!). Today we’re making the most delicious Peach Burrata Salad that has everything you love about a Caprese salad, plus tons of fun extras! 

Summer salads are one of my favorite ways to serve dinner on super hot days. And this particular one is refreshing, packed with protein, greens, fresh peaches, juicy tomatoes, decadent burrata, and sweet and tangy honey dijon dressing. Pine nuts are sprinkled on top of the salad for extra crunch, and basil for extra herby flavor.

If this doesn’t sound like the best way to serve a meal, I don’t know what is!

Ingredient Notes

Peach Burrata Salad

  • Spinach
  • Arugula
  • Burrata cheese: If you don’t have fresh burrata or can’t find it at the grocery store, feel free to swap this with fresh mozzarella cheese. 
  • Sliced prosciutto
  • Peach slices: You can use yellow peaches or white peaches, whichever you prefer. It’s important to pick ripe peaches so you can use them right away.  
  • Fresh basil
  • Pine nuts: If you don’t have pine nuts, you could also use crunchy pecans, which would be a great addition.  
  • Cherry tomatoes

Dressing

  • Extra virgin olive oil
  • White wine vinegar
  • Lemon juice
  • Dijon mustard
  • Honey
  • Shallots
  • Minced garlic
  • Salt and black pepper to taste

Step-by-Step Instructions

  1. Remove the burrata cheese from the fridge and allow it to sit for 20 minutes. It is best served close to room temperature. 
  2. Cover a platter with the spinach and arugula. Top with sliced cherry tomatoes, peaches, prosciutto, and burrata cheese. Garnish with pine nuts and fresh basil. 
  3. Add all the ingredients for the dressing to a blender or bowl. Blend together for 10-15 seconds or use a whisk and whisk together until combined in a bowl.
  4. Drizzle the peach burrata salad with the dressing and serve.

  • If you don’t have fresh burrata or can’t find it at the grocery store, feel free to swap this with fresh mozzarella cheese. 
  • I recommend building the salad on a serving platter with tongs so it’s easy to pass around and serve.

Ingredients  

Salad

  • 5-6 cups arugula and spinach mix
  • 8-10 oz Burrata cheese torn into bite size pieces
  • 2 large peaches sliced
  • 8 slices prosciutto
  • 6-8 leaves fresh basil
  • 2 tbsp pine nuts
  • 3-4 cup cherry tomatoes cut in half

Dressing

  • 1/2 cup olive oil extra virgin
  • 1/4 cup white wine vinegar
  • 1 tsp lemon juice
  • 1 tbsp Dijon mustard
  • 1-2 tbsp honey
  • 2 tsp shallots finely diced
  • 1 clove garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions
