Ingredient Notes
- non-alcoholic tequila: Many brands make zero-proof tequila alternatives that have the flavor of tequila with none of the effects. If you want to make both cocktail and mocktail versions, you can use regular blanco tequila for the alcoholic version.
- fresh lime juice: Plus lime wedges or lime slices for garnish.
- jalapeno simple syrup: To make this, you’ll need sliced jalapenos, water, and sugar. If you want a sugar-free alternative, use allulose. This is the only no-sugar sweetener that won’t crystalize once stored in the fridge.
- peach puree: For this peach puree, you’ll need one large peach and powdered Swerve. You can also use regular powdered sugar if you don’t mind the sugar content.
- peach sparkling water: You can also use club soda or plain soda water.
Step-by-Step Instructions
Peach Puree
- BLEND: Add the peaches and powdered swerve to a blender. Blend on high for 15-30 seconds or until everything is combined.
Jalapeno Simple Syrup
- HEAT: Combine the allulose or sugar, water, and jalapeños in a small saucepan. Stir until everything is combined. Warm over medium-low and heat until the sugar is completely dissolved. This process takes about 5 minutes.
- DRAIN: Pour the sugar mixture through a sieve into a mason jar or jar of choice. Cover with a lid and refrigerate until cool. Throw away the jalapenos or add them to your mocktail.
Margarita Mocktail
- To a cocktail shaker, add the peach puree, non-alcoholic tequila, lime juice, and simple syrup. Shake vigorously for 20 seconds. Rim a glass with honey and Tajin seasoning.
- Pour the mocktail over ice and top off with peach sparkling water. Garnish with sliced jalapenos and a peach slice.
