What Makes This Recipe Great
If you love gin cocktails, this Strawberry Gin Cocktail recipe is for you! It features sweet strawberries, vanilla ice cream, flavored simple syrup, Empress gin, and lemonade! Blended into a smooth and creamy drink.
It’s a little tart, perfectly sweet, and absolutely refreshing! A classic gin cocktail with a summery twist. I just know you’re gonna love this one!
Ingredient Notes
- vanilla ice cream: Use dairy-free vanilla ice cream if you’re vegan or dairy free.
- frozen strawberries: You can also use fresh strawberries, but I like to use frozen ones since it adds more coldness to the drink without needing ice cubes.
- gin: I used Empress 1908 gin which is my personal favorite gin and is a top choice for this delicious cocktail.
- lavender syrup: You can also substitute simple syrup for this if preferred.
- strawberry syrup: This adds so much delicious strawberry flavor! I have a homemade strawberry syrup recipe you can make, or you can use a store-bought version.
- lemonade: Use whatever lemonade you like!
Step-by-Step Instructions
- Add all ingredients to a blender and blend on high until smooth and combined.
- Serve in a tall glass and garnish with a strawberry and fresh lavender.

Lemonade Recipe: If you don’t have lemonade on hand, here’s a quick way to make a batch! All you’ll need is fresh lemon juice, water, and sugar.
- In a saucepan over medium heat, dissolve 1 cup sugar and 1 cup water to make a simple syrup. Once dissolved, set aside to cool.
- Add 1 cup fresh squeezed lemon juice to a pitcher with 2-3 cups of cold water. For best results, add the simple syrup ¼ cup at a time until desired sweetness is reached.
- Store in the refrigerator for up to 5 days! Use to make this strawberry gin lemonade freeze!
Blender: If you don’t have a high-speed blender, you can use a food processor for this recipe. The same instructions apply.
Dairy-Free: If you want to make this strawberry gin cocktail dairy free, use your favorite non-dairy vanilla ice cream.
Serving Tips
- This is an easy, tasty cocktail for a fun poolside summer day or the perfect elevated (and beautiful!) drink for special occasions.
- Serve garnished with a sprig of lavender, fresh ripe strawberries, and a pretty flower if desired.
