  • Pepperoncini juice: A splash of this amplifies the tanginess and ties all the flavors together. You can use a bit of pickle juice in a pinch.
  • Green onions: Add a fresh, super mild onion flavor. If you don’t like green onions, swap them with chives for a slightly subtler taste.
  • Shallot: Regular onions work great if that’s what you have on hand.
  • Garlic powder: A little bit of garlic powder brings an earthy undertone to round out the flavors.

Step 1: Combine everything in a large bowl and stir until well blended. Cover the dip and refrigerate for at least 1 hour. Before serving, top with more diced pepperoncini and green onions.

I prefer Greek yogurt over the blended cottage cheese for this dip. 

For a dip that’s a little bit milder, reduce the amount of pepperoncinis or opt for a milder variety. To make it spicier, you can add a dash of crushed red pepper flakes or finely chopped jalapeños.

If you like a thinner dip, add a bit more pepperoncini juice or a dash of milk (dairy or non-dairy) until it’s the consistency you like. 

For a smoother dip, use a food processor or blender.

Servings: 8 servings (2 cups)

Ingredients  

  • 2 cups Greek yogurt or blended cottage cheese can sub dairy-free yogurt of choice
  • 1 1/2 tbsp homemade ranch seasoning or 1 packet ranch dressing mix
  • 1/3 cup pepperoncinis finely chopped
  • 1 teaspoon pepperoncini juice
  • 1/4 cup green onions finely chopped
  • 1 small shallot, finely diced or 2-3 tablespoons of chopped onions
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1-2 cloves garlic finely minced
  • salt and pepper to taste

Instructions 

  • Combine everything in a large bowl and stir until well blended. Cover the dip and refrigerate for at least 1 hour. Before serving, top with more diced pepperoncinis and green onions.

    Delicious! Another winning sauce/dip from Mac! My family has a tried and true favorite dish we call pepperoncini beef (it’s just a chuck roast slow cooked with an entire jar of sliced pepperoncini pepers until it can be shredded). Last night we served the pepperoncini beef on slider rolls topped with this ranch. It was a huge hit. Thank you!
