Why You’ll Love This Buffalo Chicken Salad Recipe

Chicken salad is one of those dishes that you will always find in my fridge. Each week, I love whipping some up on Sunday afternoon and having it available in the fridge to grab throughout the week for an easy and delicious meal option. I have always been one that will eat chicken salad for breakfast because I love it that much! 

This week, I’m mixing it up and testing out new chicken salad recipes that will keep my meal options fresh and not boring. I try to experiment with a lot of different ways to spice up a boring traditional salad recipe and my new Buffalo Chicken Salad takes it to a whole different level. This recipe is so creamy and savory and almost mimics a chicken wing. 

Throw it on top of a salad or even add it to a sweet potato and heat up for a really magical meal. Shoot, you can even grab the bowl and a fork and eat it all by itself. The Buffalo Dill Mayo that I created especially for this chicken salad is out of this world incredible. I also use it on top of veggies and other boring protein options.

Ingredient Notes

  • cooked chicken: You can use rotisserie chicken, leftover shredded chicken, or cook up some boneless skinless chicken breasts or chicken thighs and chop them. 
  • pickles
  • sweet onions
  • salt and black pepper to taste
  • fresh dill
  • mayonnaise, plain Greek yogurt, or plain dairy-free yogurt
  • Buffalo Sauce: I used Frank’s Red Hot. Feel free to use your favorite brand of hot sauce. 
  • garlic powder

  1. Add the chopped chicken and the rest of the ingredients to a large bowl. Mix until well combined. Garnish with fresh dill if desired.
  2. Serve on bread, in a lettuce wrap, on top of a green salad, or use your favorite crackers for dipping.

Expert Tips

  • If you’re Whole30, use a compliant mayonnaise such as Primal Kitchen and Stonewall Kitchen or try my homemade mayo recipe
  • If you’re not Whole30, you can add in blue cheese crumbles or shredded cheddar cheese for extra creaminess. 
  • I used Frank’s Red Hot, but feel free to use your favorite Buffalo sauce. 

Serving & Storage Tips

To serve: 

  • Add atop a bed of fresh lettuce with crunchy veggies like bell peppers, green onions, red onion, cherry tomatoes, and more!
  • Stuff the chicken salad into half of an avocado or over a sweet potato
  • Make a chicken salad wrap with tortillas or lettuce wraps or serve as a Buffalo chicken salad sandwich!
  • Serve with crackers and fresh vegetables like carrot sticks, celery, and cucumbers. 

To store, place your leftover chicken salad in an airtight container in the refrigerator for up to 5 days.

Ingredients  

  • 3 1/2 cups cooked chicken chopped
  • 1/2 cup pickles chopped
  • 1/2 cup sweet onions finely diced
  • salt and pepper to taste
  • 2 tbsp fresh dill
  • 3/4 cup mayo or sub Greek yogurt
  • 1/2 cup Buffalo Sauce I used Franks
  • ½ teaspoon garlic powder

Instructions 

  • Add the chopped chicken and the rest of the ingredients to a large mixing bowl. Mix until well combined. Garnish with fresh dill if desired
  • Serve on bread, in a lettuce wrap, on top of a green salad or use your favorite crackers for dipping.

Recipe Updated:

This recipe was recently updated. The previous recipe is the same as above, but instead of 1/2 cup buffalo sauce, I used to only use 2 tbsp of sauce. That is the only change to the recipe.
