What Makes This Recipe Great

At my house, taco night is a great way to get everyone to eat. Instead of tacos this time, I decided to switch it up and make tostadas. I love this new recipe because it takes only 10 minutes to throw together and is the perfect way to use leftover chicken and other on-hand ingredients. 

The result is a delicious (not to mention kid-friendly!) and easy Chicken Tostadas recipe that is packed with protein, flavorful, and easily customized with the toppings of your choice! 

At my house, we opted for a fresh BBQ chicken theme with crispy tortillas as the base, then BBQ chicken, feta cheese, diced red onion, pineapple, and green onion! Then we topped them with a creamy, tangy, and delicious lime crema recipe that added the perfect touch. 

There are so many different ways to serve chicken tostadas, so grab your favorite toppings, and have a blast making this quick and easy weeknight dinner!

Ingredient Notes

Chicken Tostadas

  • Tostada shells: You can make your own with a little oil and corn tortillas or flour tortillas, or buy the packaged shells. 
  • Rotisserie chicken: You can pick up a rotisserie chicken from your local grocery store or check out my easy air fryer whole chicken recipe. This recipe will also work with leftover chicken breast from another meal. 
  • Barbecue sauce: Use your favorite or whatever you have on hand. If you want to make your own, check out my BBQ sauce recipe
  • Feta cheese: I like to buy crumbled feta cheese. You can substitute cotija cheese or your favorite shredded cheese. 
  • Red onion
  • Pineapple
  • Green onion

Lime Crema 

  • Sour cream: If you’d like a dairy-free option, try Forager dairy-free sour cream. It’s an excellent alternative. 
  • Lime 
  • Salt

Step-by-Step Instructions

Chicken Tostadas

  1.  To a bowl, add the shredded chicken and 3/4 cup BBQ sauce. Mix until combined
  2. Add a tablespoon or so of BBQ sauce to each tostada shell. Then start building with chicken, onions, pineapples, and feta cheese.
  3. Drizzle the sour cream sauce over each tostada and enjoy. Squeeze with fresh lime juice if desired. I eat mine as is and do not heat it. However, if you want them warm, simply add them to a 350F oven for 5-6 minutes.

Lime Crema 

  1.  In a small bowl, add the sour cream and lime juice with salt to taste. Mix together until combined.

  • Homemade tostada shell: If you want to make your own crispy tostada shells, you’ll need small, taco-sized corn or flour tortillas. Add a tablespoon of oil to a large skillet over medium-high heat. Add the tortillas to the hot skillet and fry until desired crispness is achieved. 
  • Dairy-Free: You can make your tostadas dairy free by swapping the cheese for a dairy-free alternative and using dairy-free sour cream. 
  • Toppings: The best thing about this recipe is that it can be customized to your preferences, making it really fun for the whole family. Top your crunchy tostadas with all your favorite toppings, including black beans, pinto beans, shredded romaine lettuce, tomatoes, fresh cilantro, hot sauce, guacamole, fresh pico de gallo, avocado, lime wedges, and more! 

Serving Tips

  • Serve this chicken tostada recipe warm with desired toppings. Create a “make your own” chicken tostadas bar by setting out all of the ingredients in small bowls and letting everyone build their own. This makes meals so much fun! 

Storage Tips

  • Store ingredients separately in airtight containers and build your chicken tostadas when ready to eat. The chicken will last for up to 3-4 days if stored in an airtight container. The lime crema will keep for up to 5 days stored in a jar with a lid or Tupperware. 
  • Use the lime crema for a number of other recipes, including taco salads, burritos, fish tacos, chicken dishes, and more!

Ingredients  

Tostadas

  • 4-5 tostada shells
  • 3 cups rotisserie chicken shredded and warmed up
  • 1 cup BBQ sauce of choice
  • 1/3 cup feta cheese
  • 1/3 cup chopped red onions
  • 1/3 cup chopped pineapples
  • 1/3 cup chopped green onions

    These are delicious and so easy! I’ve tried several of your recipes now, egg roll bowls, ranch roast to name a few and have loved them all!
