Breakfast Pizza Recipe

  • flour tortillas: I used low-carb tortillas as a low-carb, thin crust alternative to pizza dough. It gets crispy and holds up really well as the pizza crust. 
  • shredded cheddar cheese
  • ground pork sausage: Cooked and strained. 
  • eggs: You’ll want to scramble these first before assembling and cooking your pizza. 
  • cottage cheese creamy cheese sauce
  • salt and black pepper to taste
  • optional toppings: diced bell peppers, onions, tomatoes, or salsa.
  • fresh herbs: Such as chopped parsley or chives for garnish

Cottage Cheese Sauce

  • cottage cheese: Use regular or low-fat. 
  • nutritional yeast

Cottage Cheese Sauce

  1. Blend the sauce: Add the cottage cheese and nutritional yeast to a blender or food processor and blend until creamy and smooth. 

Breakfast Pizza

  1. Preheat the oven: Preheat your oven to 375°F (190°C).
  2. Cook eggs and sausage: Whisk eggs and prepare your egg mixture as you would to make scrambled eggs. In a large skillet or pan over medium heat, scramble the eggs and set aside. Then, using the same or another skillet, cook and prepare the sausage. Set aside. 
  3. Prepare the tortilla: Place the tortilla on a baking sheet or a pizza stone.
  4. Add the cheese sauce: Smear the cottage cheesy sauce evenly over the tortilla, leaving a small border around the edges.
  5. Add eggs, sausage, and cheese: Distribute the scrambled eggs over the cheesy sauce, followed by the cooked breakfast sausage over the eggs. Add any additional toppings, such as diced bell peppers, onions, or tomatoes.
  6. Top with remaining cheese: Sprinkle the shredded cheese over the sausage and toppings.
  7. Bake in the oven: Place the baking sheet or pizza stone in the preheated oven and bake for about 10-12 minutes or until the cheese is melted and bubbly and the edges of the tortilla are golden and crispy. Enjoy!
  8. OR Cook in the air fryer: Cook at 375F for 5-8 minutes or until the cheese is melted and the edges of the tortilla are crispy.

    Looking for all the high protein meals and this one did not disappoint. We really enjoyed it for brunch this weekend.

    I made this for myself and my son who is quite picky. It was a hit! Delicious breakfast option to the regular scrambled eggs. I added some spinach to the eggs to get a little more fiber. This recipe leads to all kinds of flavors – Mexican, Greek, etc.
