Hamburger Soup, the Quick & Cozy Meal You’ve Been Waiting For!
I’m always looking for easy, low-carb recipes using ground beef. Ground beef is so versatile, flavorful, affordable, and just plain delicious! I love that it makes low carb and keto recipes super easy to whip up, and the whole family loves them!
Enter, Hamburger Soup. What could be better than everyone’s favorite sandwich turned into a hearty, beefy, keto soup? This recipe is packed with flavor, kid-friendly, and so quick! You are going to love it!
Ingredient Notes
This Hamburger Soup is the perfect balance of tangy and savory. With just a few simple ingredients, this soup packs in some serious flavor!
Banana Peppers: I also added banana peppers that brought even more flavor and texture to the green beans, tomatoes, and hamburger meat.
Juice from the Banana Pepper Jar: The juice added from the banana pepper jar really brought all the flavors together in this soup.
Beef Broth: You can use beef broth or beef bone broth, both are super easy to find in the store. I love getting this from Thrive Market, Sprouts, or even Walmart!
How to Make this Keto Soup Your Way!
I made my hamburger soup on the stovetop (instructions in recipe card!), but there are so many ways to make this soup. Choose the version that works best for you, and still get the best keto hamburger soup results!
SLOW COOKER INSTRUCTIONS:
- Heat the olive oil in a large skillet over medium-high. Add the tablespoon olive oil and the ground beef along with the garlic and onion. Cook until the meat is browned and onion is translucent, 2 minutes.
- Transfer to the slow cooker and add the broth, canned tomatoes (with liquid), tomato paste, banana peppers and juice, onion salt, Italian seasoning, salt, and pepper. Stir to combine.
- Cover and cook on LOW for 6 to 8 hours.
- Divide among bowls and enjoy!
INSTANT POT INSTRUCTIONS:
- Turn on the Instant Pot and set it to sauté and allow time to heat up
- Add 1 tbsp ghee and place the minced garlic, onions and hamburger meat, around 3-4 minutes
- Turn the settings on the instant pot to high pressure. Once this setting is on, add the rest of the ingredients for the soup.
- Lock the lid making sure the top vent is sealed. Cook on high pressure for 10 minutes.
- Once the cook time is over,do a quick release to remove the pressure.
- Stir together with a wooden spoon and divide among bowls and enjoy!
Tips & Tricks
- Using fresh green beans will make a big difference. If you only have frozen or canned green beans, those will absolutely work too, but fresh is always best.
- Stove Top Version: The longer it simmers, the better flavor the hamburger soup will have.
- If you are storing this in your fridge, use an airtight glass container. It seems to stay fresher that way.
FAQs
Finding Whole30-compliant banana peppers may involve a little additional work. My recommendation is always to be sure to read your ingredients and check with the Whole30 additive cheat sheet to make sure it aligns with the program.
I have found compliant banana peppers through Thrive Market, Amazon, Whole Foods, and sometimes even Walmart. Jeff’s Naturals, Sunraised, and Divina Sliced Pepperoncini’s from Thrive Market.
Yes! Store in an airtight, freezer-safe container for up to 3 months in the freezer. Thaw overnight in the fridge before reheating in the microwave or stovetop.

Ingredients
- 2 lbs ground beef
- 1 tbsp olive oil
- 2 garlic cloves minced
- 1 small yellow onion diced
- 1-28 oz can diced tomatoes with juice
- 1- 6 oz can tomato paste
- 5 cups beef broth
- 1 1/2 tsp Italian Seasoning
- 1/4 tsp onion salt
- Salt and Pepper to taste
- 1 cup banana peppers and 1/2 cup of the juice that it comes in
- 1- 12 oz bag of green beans frozen, fresh or canned
Instructions
STOVE TOP INSTRUCTIONS:
- Heat the olive oil in a 5- or 6-quart Dutch oven or large pot over medium-high. Add the onion and garlic and cook until translucent, 2 minutes. Add the beef and cook until brown, 4 to 5 minutes.
- Transfer the bag of green beans to the beef and combine together with a spoon.
- Add the broth, canned tomatoes (with liquid), tomato paste, banana peppers and juice, onion salt, Italian seasoning, salt, and pepper. Stir to combine.
- Bring to a boil, then reduce the heat and simmer until the green beans are very tender, 30 minutes.
- Divide among bowls and enjoy!

Notes
- Compliant banana peppers can be a little harder to find. You can find compliant peppers at Whole Foods, Thrive Market and other health food stores. Always make sure to read the instructions.
- Store soup in a glass container and store in the fridge for up to one week and up to 3 months in the freezer.

We made this and really liked it. My daughter took it for lunch 3 days and we have had 3 dinners from it. It’s great! We used rotel instead of just regular diced tomatoes, because my fam loves spice. It was super simple, but super tasty- we also had some baby Bella mushrooms left over from mac’s not so cheesesteak stuffed peppers So we added those in. This will definitely be added to our regular rotation!

Very unique flavors! I love how the banana peppers bring the “mustard flavor” of a classic hamburger.
