This amazing, easy hamburger soup recipe combines tender ground beef, diced tomato, green beans, banana peppers, and beef broth to make an easy, cozy, low-carb meal!

Let me tell you, this family favorite, comforting soup is such a winner! Full of delicious ground meat, veggies, and spices, this delicious soup is a complete meal with a ton of flavor and healthy ingredients and will warm you up on a chilly day.

What I love about this Hamburger Soup is that it’s a wonderful, hearty soup full of delicious ingredients but super low in carbs! Protein-packed and delicious– truly the perfect meal!  

Ingredient Notes

This Hamburger Soup is the perfect balance of tangy and savory. With just a few simple ingredients, this soup packs in some serious flavor!

  • lean ground beef: You can also use ground chicken or ground turkey if desired. 
  • olive oil
  • garlic 
  • yellow onion
  • green beans: Using fresh green beans will make a big difference. If you only have frozen or canned green beans, those will absolutely work, too, but fresh is always best.
  • diced tomatoes
  • tomato paste
  • banana peppers: I also added banana peppers that brought even more flavor and texture to the green beans, tomatoes, and hamburger meat.
  • juice from the banana pepper jar: The juice added from the banana pepper jar really brought all the flavors together in this soup.
  • beef broth: You can use beef broth or beef bone broth. Both are super easy to find in the store. I love getting this from Thrive Market, Sprouts, or even Walmart!
  • Italian seasoning
  • onion powder
  • salt and black pepper to taste

How to Make this Keto Soup Your Way!

I made my hamburger soup on the stovetop (instructions in recipe card!), but there are so many ways to make this soup. Choose the version that works best for you, and still get the best keto hamburger soup results!

Stove Top Instructions

  1. Heat the olive oil in a 5- or 6-quart Dutch oven or large pot over medium-high heat. Add the onion and garlic and cook until translucent, 2 minutes. Add the beef and cook until brown, 4 to 5 minutes. Drain the excess grease if desired. 
  2. Transfer the bag of green beans to the beef mixture and combine together with a spoon.
  3. Add the broth, canned tomatoes (with liquid), tomato paste, banana peppers and juice, onion salt, Italian seasoning, salt, and pepper. Stir to combine.
  4. Bring to a boil, then reduce the heat to low-medium heat and simmer until the green beans are very tender, about 30 minutes.
  5. Divide among bowls and enjoy!

Slow Cooker/ Crock Pot Instructions

  1. Heat the olive oil in a large skillet over medium-high. Add the tablespoon of olive oil and the ground beef, along with the garlic and onion. Cook until the meat is browned and onion is translucent, 2 minutes.
  2. Transfer to the slow cooker and add the broth, canned tomatoes (with liquid), tomato paste, banana peppers and juice, onion salt, Italian seasoning, salt, and pepper. Stir to combine.
  3. Cover and cook on LOW for 6 to 8 hours.
  4. Divide among bowls and enjoy!

Instant Pot Hamburger Soup

  1. Turn on the Instant Pot and set it to sauté and allow time to heat up
  2. Add 1 tbsp ghee and place the minced garlic, onions, and hamburger meat, around 3-4 minutes
  3. Turn the settings on the instant pot to high pressure. Once this setting is on, add the rest of the ingredients for the soup.
  4. Lock the lid, making sure the top vent is sealed. Cook on high pressure for 10 minutes.
  5. Once the cooking time is over, do a quick release to remove the pressure.
  6. Stir together with a wooden spoon, divide among bowls, and enjoy!

Expert Tips

  • Using fresh green beans will make a big difference. If you only have frozen or canned green beans, those will absolutely work, too, but fresh is always best.
  • Stove Top Version: The longer it simmers, the better flavor the hamburger soup will have.
  • Compliant banana peppers can be a little harder to find. You can find compliant peppers at Whole Foods, Thrive Market, and other health food stores. Always make sure to read the instructions.
  • Feel free to add additional veggies as desired– carrots, corn, celery, potatoes, bell peppers, red onions, and other vegetables make great additions. Just keep in mind that they may not be keto or whole30 compliant. 
  • If you want to add some heat to this hamburger soup, feel free to add a little bit of chili powder or cayenne pepper. 

Storage Tips

Store leftover soup in a glass container and store it in the fridge for up to one week. I like using glass containers because I find that the leftovers stay fresher longer, but you can use any airtight container you have on hand. 

To freeze, store in freezer-safe containers or a freezer bag in the freezer for up to 3 months. Thaw overnight in the refrigerator and reheat.

Cook Time: 30 minutes
Servings: 8 servings

Ingredients  

  • 1.5 lbs ground beef
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 small yellow onion diced
  • 1 28 oz can diced tomatoes undrained
  • 3/4 cup banana peppers
  • 1/3 cup banana pepper brine juice
  • 1 6 oz can tomato paste
  • 4-5 cups beef broth
  • 2 tsp Italian Seasoning
  • 1 tsp onion powder
  • Salt and Pepper to taste
  • 1 12 oz bag green beans frozen, fresh or canned

    I made this for my husband to take for lunch and he called me from work to tell me how amazing it is!!! I do add in some yellow squash and zucchini to make it a bit more stew like. I must admit that I halved it the first time I made it and accidentally added the entire amount of the banana pepper juice. Now he won’t have it any other way. But this is literally all he requests for lunch.

    I love this recipe – thank you so much for sharing! We made this on a weeknight and had leftovers for lunch the next day and they were amazing. We added a cup of instant rice to the mix before letting it simmer on the stovetop, but this would be great as-is!

    I thought I left a comment about this soup but who knows if I actually did or did it in me head!! This soup…according to my husband because I cannot eat it…is so ridiculously good!!! He literally called me from work just to tell me, and since then I have made a batch every week for his lunches. I did accidentally tweak it and then added in some different veggies…First, I accidentally got the hot banana peppers…good thing my husband likes heat…then I accidentally added in the entire amount of pepper juice even though I was only making half the recipe. We did add in some yellow squash and zucchini and now he will not have it any other way…he just shakes his head every time he eats it and that is how I know it is a winner. Thanks!!
