Curry Coleslaw

When I think of home, I think of Curry Coleslaw. My grandmamma (Sue Sue) would always make the best coleslaw growing up and when I eat it, I get all the “warm feels” of family. Her version was loaded with non-compliant Whole30 ingredients, so I recreated a version to align with my Paleo and Whole30 lifestyle.

This is a staple side dish in my kitchen and when I make it, love feels my heart and all of those special memories of my grandma standing in her kitchen wearing her apron and big smile come crashing back. My goal is to always to keep the spirit of my Sue Sue’s love for cooking alive in my own kitchen. She continues and will always be my inspiration for creating food that is memorable and filled with love.

Curry Coleslaw

Ingredients

  • 4 cups coleslaw mix
  • cup ½ compliant mayo
  • 1 tsp curry powder
  • 1 tsp salt and pepper
  • splash of rice vinegar

Instructions

  1. Add your coleslaw to a large bowl.
  2. Mix in one half cup of compliant mayo (Whole30). If not Whole30, use mayo of choice.
  3. Add your curry powder salt, pepper and rice vinegar and mix together until combined.
