This really is the best Christmas cocktail or mocktail for a party or gathering this holiday season. Make a pitcher or an individual drink with a few simple ingredients, then top with rosemary sprigs, sugared cranberries, and a lime wedge for a beautiful and delicious beverage. This creamy coconut margarita is the perfect holiday cocktail! 

Ingredient Notes

  • coconut water
  • coconut milk: Use a can of unsweetened coconut milk or coconut cream and add some water.
  • non-alcoholic tequila: or Blanco tequila for the cocktail version. Gold tequila also works, if that’s what you have on hand. If desired, you could add a splash of coconut rum as well. 
  • coconut syrup: I prefer sugar-free. You can also swap this for simple syrup or agave syrup. I don’t recommend using cream of coconut as it’s incredibly sweet and full of sugar. It’s better to use coconut milk and adjust the sweetness to taste. 
  • fresh lime juice
  • fresh cranberries and a rosemary garnish
  • crushed Ice
  • Olipop lemon-lime soda: Or sparkling water.
  • Coarse salt or sugar: To add a little bit of salt or sugar to the rim of the glass. 

Step-by-Step Instructions

  1. Add all of the mocktail/cocktail ingredients except for the garnish and Olipop to a cocktail shaker and shake vigorously for 20 seconds. 
  2. Add crushed ice to a 12 oz. glass and pour the shaken drink over the ice. Leave a little room at the top and add a splash of lemon-lime soda or sparkling water of choice. 
  3. Garnish with cranberries, fresh rosemary sprig, and a lime wedge if desired. Enjoy!

Expert Tips

  • If you are not dairy-free, feel free to substitute heavy cream for the coconut milk.
  • If you don’t have coconut syrup, substitute simple syrup. 
  • Use crushed ice. It really is a game-changer for this cocktail. I love going to Sonic and buying a bag of their crushed ice for $2. If you don’t have a Sonic nearby, add some ice to a bag and use a meat mallet to crush up the ice.
  • The best Non-Alcoholic Tequilas are Ritual and Free Spirits. Use their silver tequila or blanco options. 
  • Pitcher Recipe: To make a large batch of these white Christmas margaritas, follow this recipe here (serves 8).

    Strong, just the right amount of sweetness, & totally creative! I really enjoyed! Was a tad hard to find white cranberry juice but had success at local wal-mart.

    Made these on Christmas Eve and very much enjoyed myself. My husband was skeptical to try because he does not like tequila. But I think the combo of the coconut milk & cranberry juice help conceal the taste of the tequila lol. I added a little simple syrup for extra sweetness (although it probably did not need it). These were a great special treat to have for the holidays – I will definitely save this recipe to use again next year!
