Spicy Pickle Margarita Recipe (Mocktail or Cocktail)

This pickle margarita is a pickle lover’s dream! Full of sweet and spicy flavor, and a chamoy and Tajin seasoned rim, this mocktail or cocktail is the perfect treat for a summer BBQ, girl’s night, or just for fun!

Pickle lovers do I have the drink for you! Now you might be stumbling onto this recipe wondering how in the world a Pickle Margarita even exists, but trust me. Now that I have you here, you must try this delicious drink!
Perfectly refreshing on a hot summer day or for a fun twist on girl’s night, this mocktail or cocktail is seriously a must-try. Easy to customize– spicy or mild, sweet or tart, pickle-y or extra-pickle-y– you name it!
These pickle margaritas will surprise you, delight you, and make you want another! Add chamoy and Tajin to the rim of the margarita glasses or coarse sea salt, and enjoy this unique and delicious beverage concoction!

Ingredient Notes
- pickle juice: For a sweeter drink, use the pickle brine from sweet Gherkins or bread and butter pickles. For a more tart drink, use dill pickle juice.
- Non-alcoholic tequila or Blanco tequila: I like Ritual for zero-proof tequila. For regular Blanco tequila, use your favorite!
- lime juice
- jalapeno or regular simple syrup: Follow my instructions below to make Jalapeno simple syrup. You’ll need water, allulose or regular white sugar, and fresh jalapeños. Alternatively, you can sweeten with agave syrup.
- sparkling water
- tajin and chamoy for rim: You can also rim the glass with hot honey
- Gherkin pickles: I like gherkins for garnish but you can also use baby dill pickles or other pickle slices if desired.
Step-by-Step Instructions
Jalapeno Simple Syrup
- Combine the allulose or granulated sugar, water, and jalapeños in a small saucepan. Stir until everything is combined.
- Warm over medium-low and heat until the sugar is completely dissolved. This process takes about 5 minutes.
- Pour the sugar mixture through a sieve into a mason jar or jar of choice.
- Cover with a lid and refrigerate until cool. Throw away the jalapenos or add them to your mocktail.
Pickle Margarita
- To a cocktail shaker, pickle juice, non-alcoholic tequila, lime juice, and simple syrup. Shake vigorously for 20 seconds.
- Dip the rim of the glass into a shallow dish of chamoy or hot honey, then dip in Tajin seasoning or salt.
- Pour the contents of the cocktail shaker into a cocktail glass or margarita glass over ice cubes and top off with sparkling water. Garnish with pickles.

Expert Tips
- If you don’t want a spicy pickle margarita or don’t have time to make the simple syrup, simply swap for agave nectar and/or muddle some fresh jalapeno slices at the bottom of your glass.
- Rim your glass with chamoy and tajin or hot honey and tajin, or use fresh lime juice on the rim and dip into coarse salt.
- This margarita will work as a mocktail with zero-proof tequila, or as a cocktail with a shot of blanco tequila. You can also use reposado if aged tequila is what you prefer.
- I haven’t made this as a blended margarita, but if you want to try, throw all the contents of the drink into your blender with ice and make a frozen version. Let me know in the comments how it turns out!

- 0.5 jalapeno or regular simple syrup optional
- sparkling water
- tajin and chamoy for rim

- 1 cup water
- 1 cup allulose or sugar
- 1-2 jalapeno peppers sliced
Instructions
