  • 1 ½ cup gluten-free flour
  • 1 stick salted butter or vegan butter cold sliced (½ cup = 8 tablespoons = 113 g)
  • ½ cup brown sugar or coconut sugar
  • 1 tsp ground cinnamon
  • ½ tsp baking powder
  • Vanilla Ice Cream or DF ice cream

Filling

  • 2 pounds mixed berries about 6 cups
  • ½ cup + 2 tbsp coconut sugar or brown sugar packed
  • 2 tbsp cornstarch
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon lemon zest

Instructions 

  • Prep Oven & Dish: Preheat the oven to 350°F (175°C). Lightly grease a 9×9 or 8×11 baking dish or you can also use a 10 inch circle cast iron or enamel skillet.
