Ingredient Notes

Large Tomatoes: Slice each tomato into 4 thick slices. You will end up with 12 slices of tomatoes in total.

Cheese: I liked to use a mixture of shredded mozzarella cheese and parmesan cheese. You can always substitute your favorite shredded cheese in place of these.

Italian Seasoning: If you don’t have Italian seasoning on hand, combine 1/2 tsp dried oregano and 1/2 tsp dried basil for a quick and easy substitute.

Sweet Onion: I think the onions add a ton of flavor, but if you would like to omit them, these pizza tomatoes will still turn out delicious!

Fresh Basil: Chop up a few basil leaves and sprinkle on top for garnish!

  1. Preheat the oven to 400F and slice each tomato into 4 thick slices.
  2. Add the sliced tomatoes to a baking sheet with parchment paper.
  3. In a medium bowl combine the cheese and Italian seasoning. Mix together.
  4. Top each tomato with a tablespoon of chopped onions and the cheese mixture
  5. Bake on 400 for 10 minutes. Broil the last minute or two but make sure to keep an eye on them so they don’t burn.

Storage: These are best eaten hot out of the oven. If you store them in the refrigerator, the tomatoes will get soggy, so it’s best to make them fresh each time.

Dairy-Free: If you’re dairy free, opt for dairy-free shredded mozzarella and parmesan cheese! So many grocery stores carry these options, including Trader Joe’s!

Serving: Serve these pizza tomatoes at a gathering, as an appetizer, or eat a couple of servings as a full meal. The calories and carbs are low and this is the perfect healthy-ish snack or entree!

This quick & easy cheesy baked pizza tomatoes recipe is everything you love about pizza, without all the carbs & calories! Kid-friendly & delicious!

Ingredients  

  • 3 large tomatoes Sliced into 4 thick slices per tomato
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded parmesan cheese
  • 1 teaspoon Italian seasoning
  • 3/4 cup chopped sweet onion
  • Fresh chopped basil for garnish

Instructions
