My new Buffalo Chicken Patties makes eating healthy so easy and yummy. I like to pretend I am a chef sometimes and try to get real fancy and make pretty Whole30 and Paleo compliant recipes. I brought my A-Game with this one and it turned out even better than I imagined.

These Buffalo Chicken Patties may look extravagant, but they are one of the easiest meals to throw together. They can serve as an easy weeknight meal or even a great appetizer for a family gathering. Even though these are called “Buffalo” Chicken Patties, they aren’t too spicy. My 5-year-old enjoys them. If you aren’t a spicy fan, you still may want to give these a try.

Ranch makes everything better, it’s like the unicorn of food. My Whole30 Southwest Ranch recipe can totally transform an ordinary meal into a majestic and delicious recipe. I drizzled my patties with this ranch and it was the icing on the cake. It made them explode with flavor.

Ingredients needed for these Buffalo Chicken Patties:

  • Ground chicken
  • Large egg
  • Almond flour
  • Garlic powder
  • Franks Hot Sauce
  • Sweet onion
  • Green onions
  • Sea salt
  • Mayo
  • Pepper
  • Ghee

Spicy Ranch

  • Whole30 Compliant Mayo
  • Salt
  • Dried chives
  • Dried parsley
  • Dill weed 
  • Cracked black pepper
  • Garlic powder
  • Apple cider vinegar
  • White wine vinegar
  • Coconut milk (canned) 
  • Onion powder
  • Franks Hot Sauce
  • Lime juice

How to make these Buffalo Chicken Patties:

Buffalo Chicken Patties-Skillet Version

  1. In a large mixing bowl add in the ground chicken, salt, pepper, garlic powder, and onions. Mix together.
  2. Add in the Franks Hot Sauce, beaten egg, mayo and almond flour. Mix with a spoon until everything is combined.
  3. Roll the chicken mixture into 8 large or 12 mall balls and place on a plate or parchment paper.
  4. Heat a large skillet on medium/high heat with 1 tbsp of ghee.
  5. Add each patties to the skillet and use a spatula to press each ball into a disc shape.
  6. Let each patty cook 4-5 minutes on each side. It is important to check the middle to make sure the chicken is cooked all the way through. The internal temp for the patties should be 165F to be fully cooked.
  7. Remove and add to a plate and drizzle with spicy ranch and sprinkle with green onions.

Buffalo Chicken Patties-Air Fryer

  1. Complete steps 1-3 from above.
  2. Set the air fryer to 400F. 
  3. Spray the basket with cooking spray and add in each ball and press down using a spatula. Depending on how big your air fryer is, you may need to do this in 2 batches.
  4. Set the time for 14 minutes. Flip the patties half way through cooking. The internal temp for the patties should be 165F to be fully cooked.
  5. Remove and enjoy!

Spicy Ranch

  1. Add in your mayo and the rest of the ingredients to the mayo and mix together with a spoon until combined. This spicy ranch lasts about a week in the fridge.
  2. Note: For a thinner consistency, add more coconut milk.

Can you freeze these Buffalo Chicken Patties?

Yes! These are great to meal prep on Sunday or even at the beginning of the month and throw in the freezer for quick and easy meals. I simply store in a freezer proof container without the ranch on top. Then I will heat up in the oven or microwave until warm and drizzle with fresh Spicy Ranch dressing.

  • 2 pound ground chicken
  • 1 large egg, beaten
  • 1/3 cup almond flour
  • 1 tsp garlic powder
  • 3 tbsp Franks Hot Sauce
  • 1/2 sweet onion, diced
  • 1/4 cup green onions
  • 1 tsp salt
  • 1 tsp mayo
  • 1/2 tsp pepper
  • 1 tbsp ghee, for frying

Spicy Ranch

  • 1 cup Whole30 Compliant Mayo
  • 1/2 tsp salt, more or less to taste
  • 1 tbsp dried chives
  • 1 tbsp dried parsley
  • 2 tsp dill weed 
  • 1/4 tsp cracked black pepper
  • 1 tsp garlic powder
  • 1 tsp apple cider vinegar
  • 1 tsp white wine vinegar
  • 2 tbsp coconut milk, canned
  • 1/2 tsp onion powder
  • 2 tbsp Franks Hot Sauce
  • 1 tsp lime juice

Instructions

Notes

  • If the chicken mixture is still too wet, add another tablespoon of almond flour
  • Store in a glass container for up to one week and 3 months in the freezer
  • Spicy Ranch will last up to 1 week in the fridge.

  • For the people asking about substitutes for tapioca, you can just omit it all together. I did and they were delicious! I always omit the flour from any of my meatball or burger recipes – the egg works as enough of a binder and the flour is uneccessary.
    Again, these were delicious – making them again this week!

  • This is one of my favorite breakfast recipes. I made it for the first time when I was on a round of whole30 and then it was so easy and delectable that they have stayed around in my menu plans. They are the perfect amount of spicy for my daughters (age 5 and 8) and can easily be topped with more hot sauce for even more of a kick.

  • Can’t wait to make these! Wondering if I can use ground chicken breast that’s already cooked? Accidentally chopped the cooked chicken breast up too much in food processor 😝 and now trying to find a yummy recipe where it won’t taste weird..it’s like finely ground cooked chicken breast!

  • Whipped this up really quickly and they were a big hit, even for my little girl, who “doesn’t like spicy” and my little boy who refuses to eat meat. In all honesty, I just called them buffalo patties and left out the fact that they’re actually made completely of chicken.

  • Hi. Hope this comment finds you well. I have made these many times and they are awesome but it looks like the recipe was changed. Also, the ground chicken that I get is more than 2 lbs and I use to be able to adjust the chicken quantity in the recipe to get the proper amounts of everything else. Can I find the original somewhere?

    • If you go up in the recipe you will see that it says “Scale 1X and so on. If you click the 2X, it will double the recipe and ingredients for you. This recipe is pretty much the same as the old with slight tweaks. The chicken amount is the same in this recipe as the old.

  • This recipe was so delicious. I made it for my family as one of my first whole 30 recipes–it was a family favorite. After I cooked the patties, I cut them into strips and put them inside of lettuce wraps, they were Delicious. The next day we also used the leftovers for protein on our lunch salads. I would definitely recommend this for anyone and for families. My 2 year old and 8 year old love it.

Also realized in looking back that I forgot the mayo and scallions. Oops, still tasted wonderful and we have leftovers for tomorrow.
