Quick Meals

  • Plate 1: Steak with a cherry compote (recipe below), salad, and sweet potatoes.
  • Plate 2: Turkey, hummus, and tomatoes on rice cakes. I buy the cleaner roasted turkey at Costco by Dietz and Watson
  • Plate 3: Mini burger slider lettuce wraps with tomatoes, pickles, onions, peppers, and served with cottage cheese, ranch, and Wilde Chicken Protein Chips.
  • Plate 4: Steak with veggies, cottage cheese ranch, and berries.
  • Plate 5: Sirlon, mushroom, and onion stir-fry with diced sweet potatoes and a side salad with cottage cheese.
  • Plate 6: Shrimp cocktail, pickled okra, side salad, strawberries, and Wilde Chicken Protein Chips.

Creamy Cottage Cheese Ranch Dressing

  • 1 1/4 cup cottage cheese
  • 2 tbsp homemade ranch seasoning, or use 1 packet store-bought
  • 2 tbsp milk of choice (plus more to thin, if needed)
  • 1 tbsp fresh chives
  • 1 tsp red wine vinegar
  • salt and pepper to taste
  • 1/4 tsp garlic powder
  • 1/ tbsp fresh dill (optional, for extra flavor)

Instructions:

  1. Blend the cottage cheese until smooth.
  2. Add the ranch seasoning, milk, garlic, chives, red wine vinegar, and fresh dill. Mix with a spatula until combined.
  3. Taste and adjust the seasoning or milk for the desired consistency.
  4. Serve immediately or store in the fridge until the expiration date of the cottage cheese.

Cherry Compote For Steak

  • 2 cups fresh or frozen cherries (pitted)
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey or maple syrup (adjust to taste)
  • 1 tbsp butter
  • 1 small shallot, finely minced (optional, for depth)
  • Pinch of salt and black pepper

Instructions:

  1. In a medium skillet, melt butter over medium heat.
  2. Add the shallot (if using) and sauté for 1–2 minutes until softened.
  3. Stir in the cherries, balsamic vinegar, honey, thyme, salt, and pepper.
  4. Simmer for 8–10 minutes, stirring occasionally, until the cherries soften and the mixture thickens into a compote.
  5. Taste and adjust sweetness or acidity (vinegar) as needed. Let the compote cool for 5–10 minutes after cooking, it will naturally thicken up as it sits.
  6. Spoon compote over grilled or pan-seared steak.
