Creamy Cottage Cheese Ranch Dressing
- 1 1/4 cup cottage cheese
- 2 tbsp homemade ranch seasoning, or use 1 packet store-bought
- 2 tbsp milk of choice (plus more to thin, if needed)
- 1 tbsp fresh chives
- 1 tsp red wine vinegar
- salt and pepper to taste
- 1/4 tsp garlic powder
- 1/ tbsp fresh dill (optional, for extra flavor)
Instructions:
- Blend the cottage cheese until smooth.
- Add the ranch seasoning, milk, garlic, chives, red wine vinegar, and fresh dill. Mix with a spatula until combined.
- Taste and adjust the seasoning or milk for the desired consistency.
- Serve immediately or store in the fridge until the expiration date of the cottage cheese.
Cherry Compote For Steak
- 2 cups fresh or frozen cherries (pitted)
- 2 tbsp balsamic vinegar
- 1 tbsp honey or maple syrup (adjust to taste)
- 1 tbsp butter
- 1 small shallot, finely minced (optional, for depth)
- Pinch of salt and black pepper
Instructions:
- In a medium skillet, melt butter over medium heat.
- Add the shallot (if using) and sauté for 1–2 minutes until softened.
- Stir in the cherries, balsamic vinegar, honey, thyme, salt, and pepper.
- Simmer for 8–10 minutes, stirring occasionally, until the cherries soften and the mixture thickens into a compote.
- Taste and adjust sweetness or acidity (vinegar) as needed. Let the compote cool for 5–10 minutes after cooking, it will naturally thicken up as it sits.
- Spoon compote over grilled or pan-seared steak.
Eloise’s 11th Birthday Cake Request
I make my girls a cake every year for their birthdays, and they always get to pick the theme. This year, Eloise requested cookie sandwiches stacked like a cake with a Benson Boone theme….I delivered.
