    Let’s spice up your weeknight dinner with this Sticky Asian Cauliflower and Veggies recipe featuring @countrycrocks original spread (ad). I love the fact that Country Crock ® Original Spread contains no artificial preservatives or flavors and is super rich and creamy. It adds a ton of amazing flavors to this scrumptious recipe. 

Ingredients:
Sticky Asian Cauliflower & Veggies
1 large head cauliflower chopped into florets
¾ cup almond flour
1 ½ cup canned coconut milk, unsweetened
½ teaspoon xanthan gum
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon ground ginger
Green onions and sesame seeds for garnish

Sticky Asian Sauce
⅓ cup coconut aminos
2 tablespoons water
1 tablespoon Country Crock® Original Spread
2 cloves garlic, minced
½ teaspoon ground ginger
1 tablespoon sriracha
¼ teaspoon xanthan gum

Green Beans and Mushrooms
1 tablespoon Country Crock® Original Spread
2 garlic cloves, minced
3 cups fresh green beans
1 cup mushrooms

Instructions:
1.  Preheat the oven to 450F. Coat a sheet pan with cooking spray
2. In a large bowl add the batter ingredients together and mix until combined. 
3. Add the cauliflower to the batter and coat. 
4. Transfer the coated cauliflower to the baking sheet and bake for 25 mins.
5. Meanwhile make the sauce by adding everything to a pot and mixing. As it heats, it will thicken due to the xanthan gum.
6. Heat a large skillet over medium/high heat. Add the Country Crock® Original Spread along with the garlic. Heat together for a min or so. Add in the green beans and mushrooms. Cook for 5-6 minutes. 
7. Remove the cauliflower from the oven and toss gently in the sticky sauce. If desired, place it on the sheet and bake for another 5 minutes. 
8. Add the cauliflower to a plate along with the veggies. Garnish with sesame seeds and green onions.
