  • blackberry syrup: I made a homemade, low-carb blackberry syrup for this recipe, but feel free to swap this out with my keto strawberry syrup or the syrup flavor of your choice. To keep it low-carb, choose a sugar-free version of your favorite syrup. 
  • sparkling water: Use your favorite type of carbonated water: club soda, soda water, seltzer water, La Croix, etc. 
  • heavy cream or coconut cream: I used heavy whipping cream for this recipe, but if you’re dairy-free, feel free to swap this for a can of coconut milk or coconut cream
  • fresh blackberries and sprigs of mint for garnish

Step-by-Step Instructions

  1. Fill a glass with ice cubes.
  2. Add the blackberry syrup to the glass. 
  3. Slowly pour carbonated water over the syrup and ice. Finish with the cream of your choice.
  4. Stir gently to mix the syrup, cream, and water, and garnish with fresh berries and mint.

  • Syrup Flavors: If you’re looking for variations for the syrup, some popular flavors include peach, pineapple, mango, blueberry, raspberry syrup, vanilla syrup, strawberry, and more! Choose your favorite flavor and adjust the sweetness to taste. 
  • Cream: I used heavy whipping cream for this recipe, but if you’re dairy-free, feel free to swap this for a can of coconut milk or coconut cream
  • Italian Soda Bar: One fun option for Italian cream soda is to make an Italian soda bar! Create a spread with bottles of carbonated water, a few syrup flavors, cream options, ice cubes, and various garnishes. Serve glasses and straws, and let everyone build their own!

Yes, you can use Sprite instead of club soda in this Italian soda recipe, but the drink will be sweeter and have a lemon-lime flavor. Adjust the flavored syrup to balance the sweetness of the Sprite. 

Can I use granulated Monk Fruit instead of Allulose in the homemade syrup?

Allulose is my favorite sugar free sweetener to use because it won’t crystalize once cooled. Previously, when I have used granulated Monk Fruit, my syrup will become crystal after just a few days of being in the refrigerator. Since switching to allulose, I have not had any issues with my syrup crystalizing.

Low-Carb Creamy Blackberry Italian Soda Recipe

This beautiful and bubbly Italian Soda Recipe combines sparkling water, low-carb blackberry syrup, and heavy cream served over ice and garnished with fresh blackberries and mint. A crisp, refreshing beverage that’s fun, sweet, and low-carb! Dairy-free option included.

Servings: 1 cocktail

Ingredients  

  • 2 tbsp blackberry syrup
  • 4 oz sparkling water
  • 2 oz heavy cream or coconut cream
  • fresh blackberries and mint for garnish

Low Carb Blackberry Syrup

  • 2 cups fresh or frozen blackberries
  • 1 cup water
  • 1 1/3 cup allulose*

Instructions 

Italian Soda

  • To a glass, add in the syrup and fill the glass with ice. Top the syrup with sparkling water and then finish with cream of choice. Mix with a spoon and garnish with fresh blackberries and mint.

Blackberry Syrup

  • In a saucepan, combine the blackberries, allulose, and water. Bring the mixture to a boil over medium heat, stirring occasionally to dissolve the sugar. Once it reaches a boil, reduce the heat to low and let it simmer for about 10-15 minutes, or until the blackberries have softened and released their juices.
  • Use a fine-mesh strainer or cheesecloth to strain the mixture into a bowl, separating the liquid from the solid parts. Allow the syrup to cool completely before transferring it to a clean bottle or jar.
  • Store the blackberry syrup in the refrigerator for up to two weeks.

Notes

Expert Tips

    • Allulose won’t crystallize once cooled. I don’t recommend using monk fruit as it will crystallize once cooled. If you don’t care about sugar count, use 1 cup of real cane sugar in place of the allulose.
