Ingredients You’ll Need

recipe ingredients in small bowls and labeled

Pasta Base

  • Chicken: Protein-packed and hearty. Swap for turkey or leftover rotisserie chicken for easy meals.
  • Gluten-free pasta (penne pasta or rotini): Provides the base for the casserole. Regular pasta can be used if gluten isn’t a concern. I use the Jovial brand.
  • Cherry tomatoes: Adds a burst of freshness and natural sweetness; swap with grape tomatoes or diced Roma tomatoes if needed.
  • Marinara sauce: Creates a rich, savory foundation for the dish; use your favorite store-bought or homemade marinara for customization.
  • Chicken broth: Helps thin the marinara sauce slightly while enhancing the savory depth; vegetable broth works for a plant-based twist.
  • Garlic: Adds a robust and aromatic flavor; garlic powder can be a backup option.
  • Butter: Enhances the richness of the dish and balances flavors; use dairy-free butter if needed.

Topping

  • Gluten-free breadcrumbs or crushed gluten-free crackers: Creates a crispy, golden crust. Regular breadcrumbs can be used if gluten isn’t a concern.
  • Garlic powder: Adds a hint of savory, garlicky flavor to the topping; a fresh garlic rub can also work.
  • Onion powder: Provides a subtle sweetness and depth to the topping; finely grated onion could be a fresh substitute.
  • Italian seasoning: Brings a blend of herbs to enhance the casserole’s flavor; use a mix of dried basil, oregano, and thyme if you don’t have it on hand.
  • Butter: Helps bind the topping and creates a golden, crunchy texture; replace with dairy-free butter for a lighter option.
  • Salt and black pepper: Essential for seasoning.
  • Grated Parmesan cheese (optional): Adds a nutty, salty layer of flavor; swap with nutritional yeast or a dairy-free Parmesan alternative if needed.
  • Mozzarella cheese: Creates that gooey, melty finish; opt for a dairy-free mozzarella if needed.
  • Fresh basil: Adds a pop of color and fresh, peppery flavor; fresh parsley or even arugula could be used in a pinch.

Recipe Variations

  • For a little heat, sprinkle in some red pepper flakes or a pinch of cayenne pepper.
  • Add a nutrient boost by folding fresh spinach into the sauce before baking. The spinach wilts beautifully, adding both flavor and color to the dish.
  • If you love garlic, roast a few cloves and stir them into the sauce for a sweet, caramelized twist! You can also try making garlic confit to add to your casserole.

Question: Recipe title says no boil however in step 1 it tells the reader to combine the chicken, cooked pasta, sauce, broth, etc together and bake. So are we boiling the pasta beforehand or not? Thank you!
