Give me all the pasta! This baked tortellini casserole is the easiest and most delicious 30-min-meal! Lasagna with no-bake noodles meets ground beef, savory marinara, cheese tortellini, and three kinds of cheese to make a skillet bake dinner that will wow your tastebuds!

What Makes This Recipe Great

Typically, lasagna is a pretty involved dish. Swapping the standard lasagna noodles for cheese tortellini transforms this dish into lasagna with no bake noodles! A swap that cuts the time in half and tastes absolutely divine!

With simple ingredients and minimal prep, this is the perfect weeknight comfort dish that the kids will love (and the adults too!)!

How To Make This Recipe

Ingredient Notes

  • Ground Beef: You can also sub ground turkey if you prefer!
  • Cheese Tortellini: I really like Costco tortellini (the Kirkland brand), and I also like Barilla. Choose your favorite!
  • Marinara Sauce: I like to use jarred marinara to make this baked tortellini lasagna super easy. Rao’s Homemade makes a delicious sauce that is so good! I also love Priano Marinara Sauce from Aldi.
  • Olive Oil: You can use avocado oil or whichever oil you prefer, but olive oil is my favorite for this dish.
  • Cheese: Shredded mozzarella, Shredded parmesan cheese, Ricotta cheese- If you’re dairy-free, you can use non-dairy versions of these cheeses.
  • Herbs & Veggies: Sweet Onion, diced, Garlic cloves, minced, Salt/Pepper to taste, and Fresh basil chopped.

Step by Step

  1. Preheat the oven to 400F.
  2. Heat a large skillet or cast iron over medium/high heat. Add olive oil to the skillet. Once warm, add the onions and minced garlic. Cook until fragrant, about 3 minutes. Add in the ground beef and cook until browned.
  3. To the ground beef, add the jar of sauce and reduce the heat.
  4. Add the parmesan cheese and ricotta cheese to the sauce and mix together with a wooden spoon until melted. 
  5. Add the tortellini and cook for 5-6 minutes.
  6. Cover the top of the mixture with mozzarella cheese. Place the skillet in a 400F oven for 10 minutes or until the cheese is melty and bubbly. 
  7. Garnish with fresh chopped basil and serve warm.

Mac’s Tips & Tricks

Dairy-Free: If you’re dairy-free, feel free to use all non-dairy versions of the shredded mozzarella, parmesan, and ricotta cheese. You can find these at Trader Joe’s, Sprouts, Whole Foods, and many other local grocery stores.

Storage: Store leftover baked tortellini lasagna in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave and serve hot!

Protein: If you prefer a different protein than ground beef, ground turkey is a great substitute!

Can I freeze this baked tortellini lasagna?

Yes! This dish freezes so well and is such a good freezer meal to have on hand! Simply store in a freezer-safe, airtight container for up to 5 months. Defrost overnight in the refrigerator and bake in the oven until it’s warm and bubbly and heated throughout.

Do I need any lasagna noodles for this recipe?

No! This is basically a lasagna with no bake noodles because the cheese tortellini steps in as the pasta portion, making it super easy!

What are good sides to serve with this baked tortellini lasagna?

If you’re looking for easy sides to serve with this dish, you can serve it with a side salad, a caesar salad, green beans, steamed broccoli, or another favorite veggie!

Do I need to cook the cheese tortellini before using it in this recipe?

No! It will cook up on the skillet and in the oven, so there is no need to boil it beforehand.

Baked Tortellini Lasagna

This easy, baked tortellini lasagna is everything you love about lasagna without all the work! Cheese tortellini, ground beef, & ooey-gooey cheeses! Yum!
Prep Time: 5 minutes
Cook Time: 20 minutes
Servings: 6 servings

Ingredients  

  • 1 lb ground beef
  • 12 oz package of cheese tortellini I love Costco tortellini or Barilla brand. (thawed)
  • 1 24 oz jar marinara sauce
  • 1 tablespoon olive oil
  • 1 cup shredded mozzarella
  • 1/2 cup shredded parmesan cheese
  • 1/3 cup ricotta cheese
  • 1/2 sweet onion chopped
  • 3 garlic cloves minced
  • salt/pepper to taste
  • 5-6 leaves fresh basil chopped

Instructions 

  • Preheat the oven to 400F.
  • Heat a large skillet or cast iron over medium/high heat. Add olive oil to the skillet. Once warm, add the onions and minced garlic. Cook until fragrant, about 3 minutes. Add in the ground beef and cook until browned. Drain off any excess grease. 
  • To the ground beef, add the jar of sauce and reduce the heat. Add the parmesan cheese and ricotta cheese to the sauce and mix together with a wooden spoon until melted.  Add the tortellini and cook for 7-8 minutes. (If you don't want to just add in the pasta, cook the tortellini according to the box or bag before adding in, especially if it is frozen).
  • Cover the top of the mixture with mozzarella cheese. Place the skillet in a 400F oven for 10 minutes or until the cheese is melty and bubbly. 
  • Garnish with fresh chopped basil and serve warm.

  1. This was such a simple, quick & delicious meal to make! I didn’t have ricotta so I mixed a little Raos Alfredo with the marinara. Added some garlic bread and a salad and the whole fam enjoyed! Definitely adding to the weeknight meal rotation. Excited to explore the rest of your recipes!

    It was definitely fast and easy, but the beef really should have been drained before I added the sauce. The final product was a little unctuous.

    1. You can for sure drain if desired. I use 90/10 ground beef so there is usually very little grease. However, if you use 80/20 ground beef then you may want to drain. It is totally preference.

    This was absolutely delicious and the perfect weeknight meal. My husband kept saying how good it was and my daughter commented over and over while I was making it, “it smells sooooo good!” Used Violife to make it mostly dairy free. Thank you for this one – needed to quickly put dinner on the table and it tasted like it took hours.

    Easy delicious and worth every calorie. I used Italian sausage instead, no onion or garlic bc I was in a big hurry. It was just amazing.
