- Refrigeration (Optional): While not necessary, some people prefer to refrigerate whipped honey to prolong its shelf life. However, refrigeration can cause honey to crystallize more quickly. I am a big fan of storing it in the fridge. It provides a unique texture and I love the cold temperature of the honey.

However, if you want to return crystallized honey to a liquid state, you can do so by gently warming it. Place the crystallized honey jar in a bowl of warm water or microwave it in short intervals, stirring between each interval until the crystals dissolve. Once the honey returns to a liquid state, you can then try whipping it if desired.
Yes, whipped honey can crystallize over time, especially if refrigerated. This is a natural process and doesn’t necessarily affect the quality. To return it to a smoother consistency, gently warm the honey and rewhip if needed.

Whipped Honey
Ingredients
- 2 cups honey

Instructions
- Pour the honey into the mixing bowl. Using an electric mixer, whip the honey on high speed for 20-25 minutes. If using an electric mixer, start on low speed to prevent splattering and increase gradually to high speed. As you whip, the honey will turn off-white and get a fluffy, airy texture, and become spreadable.
- Stop whipping and check the consistency. You can adjust the whipping time based on your preference. If you prefer a thicker consistency, whip for a longer time.
- Transfer the whipped honey to a clean, airtight jar or container. Store at room temperature for a runnier consistency or in the refrigerator for a thicker consistency. I always store mine in the fridge!
