- Honey: If I’m making a batch for myself, I prefer to use local raw honey from the farmer’s market. However, if you’re making gifts, buying honey in bulk might be a more cost-effective method. It also doesn’t matter if you’re using a darker or lighter color honey or if it is flavored honey. Darker honey may take longer to get to the consistency you want, but it should all whip up into creamy deliciousness.
- Flavorings (optional): Vanilla extract (or a whole vanilla bean), ground cinnamon, lavender syrup, red pepper flakes, grated ginger, citrus zest (lemon, orange, grapefruit, or lime), nutmeg, mint or any combination of these!

Step 1: Pour the honey into the mixing bowl. Using an electric mixer or stand mixer with whisk attachment, whip the honey on high speed for 20-25 minutes. If using an electric mixer, start on low speed to prevent splattering and increase gradually to high speed. As you whip, the honey will turn off-white and get a fluffy, airy texture, and become spreadable.
Step 2: Stop whipping and check the consistency. You can adjust the whipping time based on your preference. If you prefer a thicker consistency, whip for a longer time.

80 ounces is 10 cups. 1 cup of liquid honey will yield approximately 1 to 1.5 cups of whipped honey, depending on how much air is incorporated during the whipping process.
