I have been craving salads non-stop this summer. This Strawberry Chicken Poppy Seed Salad has been my go-to because it is both savory and sweet, which is my favorite combo. It satisfies all my cravings on a hot day. It is also Whole30, Keto and Paleo.

Homemade Poppy Seed Dressing:

Is it frowned upon to drink salad dressing? If so, I am in trouble! I could drink this Poppy Seed Dressing because it is so darn good. Poppy seed has always been a favorite dressing of mine, but making it homemade makes it 10x better. Who knew simple ingredients could tastes so good?

How long does this dressing last?

If you have any leftover dressing, feel free to add it to a mason jar and pop in the fridge. It will last up to 4 days. Before serving, make sure to give it a good shake as the ingredients will separate and settle in the fridge.

Ingredients needed for this chicken salad:

  • Lettuce of choice
  • Chopped chicken breast, cold
  • Sliced strawberries
  • Red Onions
  • Olive oil
  • Lemon juice
  • White wine vinegar or champagne vinegar
  • Poppy seeds
  • Salt
  • Dijon mustard
  • Shallot
  • Monk Fruit granulated sweetener
  • Micro greens (optional)

A crisp and refreshing Strawberry Chicken Poppy Seed Salad that is both beautiful and delicious. Fresh greens topped with chopped chicken breast, sweet sliced strawberries, red onions and drizzled with homemade poppy seed dressing. This recipe is Keto, Paleo and can easily be tailored to Whole30 with a simple modification.

Cook Time: 10 minutes
Total Time: 20 minutes
Servings: 4 servings

Ingredients  

Chicken & Strawberry Salad

  • 6-8 cups of lettuce or greens of choice
  • 3 medium chicken breast cooked and chopped
  • 1/3 cup sliced red onions
  • Micro greens for garnish optional
  • 4 large strawberries sliced

Poppy Seed Dressing

  • 1/2 cup LIGHT olive oil
  • 1/4 cup white wine vinegar or champagne vinegar
  • 1/2 tsp salt
  • 1 small shallot
  • 1 tbsp lemon juice
  • 1 1/2 teaspoons Dijon mustard
  • 2 1/2 teaspoons monk fruit sweetener omit for Whole30
  • 1 tablespoon poppy seeds

Instructions 

Chicken & Strawberry Salad

  • In a large bowl add all of the ingredients for the salad. This can also be done by dividing the ingredients into 4 individual bowls.ย 
  • Drizzle with the poppy seed dressing and give it a big toss.ย 
  • Garnish with fresh micro greens if desired.ย 
  • Enjoy!

Poppy Seed Dressing

  • In a blender or food processor, combine monk fruit sweetener, vinegar, salt, mustard and onion and process for 20 seconds. With blender or food processor on high, gradually add oil in a slow, steady stream.
  • Pour in a mason jar and stir in the poppy seeds with a spoon

Notes

  • The dressing will last 3-4 days in the fridge. Before serving, make sure to give it a good shake.
