Healthy Pulled Pork Sliders with Sweet Potato Buns

A healthy, Whole30 version of pulled pork sliders on crispy sweet potato buns topped with coleslaw, red and green onions, and drizzled with ranch. These tasty, bite-sized appetizers are ready in just 30 minutes!

Need a healthy appetizer thatโs lifestyle-friendly but still delicious? These Pulled Pok Sliders will not disappoint. They are crispy, pack a punch of flavor, and are easy to whip up in no time. The bite-sized portions make them pop-in-your-mouth good.
Who doesn’t love a good slider, right? These babies would be yummy with beef, chicken, or any other protein source, but the shredded pork gives it a whole new spin. Topped with crispy coleslaw, red and green onions, and drizzled with my Whole30 compliant Ranch, these make for the perfect little appetizer.
Don’t even get me started on the crispy sweet potato buns. These little slices of wonder make everything taste better. They are such an amazing substitute for bread and buns, you won’t even miss the real thing! Get ready, these little pork โsandwichesโ are going to be a hit!
Ingredient Notes
- Sweet Potatoes: This recipe calls for 3 medium sweet potatoes. You will be slicing them into ยผ inch rounds for the slider buns. Feel free to leave the skin on or peel them before slicing.
- Pulled Pork: You can make your own, or for quick cooking, I like the Members Mark brand at Samโs Club. It is precooked and Whole 30 approved.
- Coleslaw Mix: Youโll find a bagged coleslaw mix in the section with other salad mixes.
- Green Onions
- Red Onions
- Ranch or Barbecue Sauce: Find a storebought version of Whole30 ranch or your favorite bbq sauce, or try my homemade recipes: Whole30 Ranch and Keto BBQ Sauce
- Salt and Pepper: Use to taste.
- Garlic Powder
- Lemon Juice: I like to use freshly squeezed lemon juice, but a bottle of lemon juice will work in a pinch.
- Apple Cider Vinegar
- Pickle Juice
- Cilantro: Optional, for garnish.
- BBQ Sauce: use your favorite brand or make your own! Here is my homemade recipe.
Recipe Step by Step
Sweet Potato Buns and Pork
- Preheat your oven to 375 degrees F. Line 2 baking sheets with parchment paper and spray with olive oil cooking spray.
- Slice your sweet potatoes in 1/4 inch round. Arrange in a single layer on your parchment paper.
- Bake for 20-25 minutes or until lightly golden brown, flipping them halfway.
- Heat a dutch oven or skillet on medium heat with olive oil.
- Add your pulled pork, and sprinkle with a little salt, pepper, and garlic powder.
- Heat the pork until it is a little crispy. Remove and set aside.
Coleslaw
- Add your coleslaw mix to a large bowl.
- Add the juice of 1 lemon, apple cider vinegar, and pickle juice and whisk until combined.
- Top with red onions, cilantro, salt, and pepper, and mix all together.
Pork Sliders
- Lay out your cooked sweet potato buns on a clean dish.
- Layer with shredded pork and coleslaw, and top with red and green onions.
- Drizzle with Whole30 Ranch and enjoy!
Macโs Pro Tips
- If youโre not Whole30 or donโt mind the bread, you can always sandwich these pulled pork sliders between Hawaiian rolls, hamburger buns, or regular dinner rolls.

- I donโt coat the sweet potatoes in any melted butter, but if youโd like to do this, you can use ghee (Whole30 compliant).

There are so many toppings to choose from! You can add bacon, banana peppers, or jalapenos to name a few.ย ย
Cheese is not Whole30 compliant, but if youโre not following the diet, you can add a slice of provolone, cheddar, or jack cheese! Even pepper jack would work for a little spice.ย
