I woke up the other night at 3 a.m. and jumped out of bed. I raced to my notebook and began to jot down the most delicious recipe that I had just dreamed about. Little did I know, that my new Hibachi Chicken Skewers and Veggies would turn out to be my new favorite recipe on my blog. It’s a real show stopper and will make you question how the heck is it considered Whole30, Paleo and Keto.

I have always been a big fan of going to the Hibachi grill. I love the food being cooked in front of me along with the amazing flavors included. We recently went to our favorite Hibachi Grill on Easter and I guess my mind couldn’t stop thinking about it. A couple of weeks later I went to bed with a blank mind and woke up at 3 a.m. with the most vivid picture in my mind of the recipe I wanted to create in honor of my love for the Hibachi grill.

In the beginning stages of recipe development for this recipe, I thought there was no way I would be able to create my favorite restaurant meal in a healthy way. Well, guess what? I was wrong! My Hibachi Chicken Skewers and Veggies taste just like they came straight from the restaurant’s grill. Furthermore, my husband threw a fit and declared that it was the most amazing recipe I have created thus far. It made me blush a little. 😉

How long does the Bang Bang Sauce last in the fridge?

It’s very important to remember that any recipe that is made with a homemade mayo base such as this sauce, should only stay in the fridge for 5-7 days. Some people go by the shelf life of the egg that is used, but I always stay on the safe side and never go past a week. To be honest though, my sauce is usually gone within a few days because it is so yummy. Always make sure to sell your jars in an airtight jar. I love storing all of my sauces in a Weck Jar.

Can these Hibachi Chicken Skewers serve as a good meal prep option?

Absolutely! I will store the chicken and veggies together in an air tight container and add the sauce in a small separate container. Just simply heat and serve and not only is it easy, but it’s super delicious for a weekday lunch.

Hibachi Chicken Skewers & Veggies

Hibachi chicken skewers served over grilled veggies and drizzled with Bang Bang Sauce. This recipe is Whole30, Keto and Paleo compliant.
Prep Time: 10 minutes
Cook Time: 25 minutes
Servings: 5 servings

Ingredients  

Chicken Skewers

  • 10 chicken tenders or 2 lbs chicken tenders
  • 3 tbsp coconut aminos
  • 1 tbsp olive oil
  • salt and pepper for seasoning

Hibachi Veggies

  • 3 small zucchinis
  • 3 carrots omit for keto
  • 1 cup mushrooms
  • 1 small yellow onion
  • 3 tbsp coconut aminos
  • 1 tbsp olive oil
  • 1/2 tsp ground ginger
  • salt and pepper to taste

Bang Bang Sauce

  • 1/2 cup mayo see notes for my homemade version
  • 1 tsp coconut aminos
  • 1/2 tsp garlic powder
  • 2 1/2 tbsp compliant sriracha sauce see notes for my homemade version

Instructions 

Chicken Skewers

  • Season chicken tenders with salt and pepper and add 2 tenders to each skewer. Heat a large skillet or grill pan over medium-high heat and add 1 tbsp of olive oil. Once pan it hot, add in each chicken skewer.
  • Pour coconut aminos over each skewer (1 tbsp coconut aminos per skewer). Allow skewers to cook for 6 minutes on each side or until the juice runs clear.

Hibachi Veggies

  • Clean the mushrooms, slice the carrots, cut the zucchinis in half long way and slice, and rough chop the onions.
  • Heat a separate medium pan over medium-high heat with the olive oil. Add in all the veggies along with the coconut aminos, salt/pepper and ground ginger. Cook until tender.
  • Serve the chicken skewers over the hibachi grilled veggies drizzled with Bang Bang Sauce.

Bang Bang Sauce

  • Add all of the ingredients to a bowl and mix together with a spoon until combined.

Notes

  • To make this lower in carbs, remove the carrots and double the mushrooms or zucchini. 
  • Whole30 Homemade Sriracha Sauce
  • Yellow Bird has a great complaint no sugar added sriracha. 
  • Whole30 Homemade 60 Second Mayo
  • Store any leftovers in a glass container for up to 1 week. 
  • Nutrition calculated with 2 tbsp of hibachi sauce and with double mushrooms and no carrots.

    I began making this thinking it was just another chicken and veggies recipe but oh my I should have known better. Ashley does not disappoint or post anything less than amazing. This was beyond delicious and is now in my regular rotation. Take the time to make the bang bang sauce (for me this meant making home made sriracha). You will be glad you did!

    Absolutely LOVE this recipe! I recently switched up the chicken and did shrimp instead, SO GOOD! The sauce is better than the “shrimp sauce” you get in a restaurant. We have this at least once every other week!

    I am making a big statement here… out of all the recipes I have tried from Healthy Little Peach, I believe this one is my favorite. It so dang good! Do not skip out of the bang bang sauce because it really ties the dish all together! I have made minor changes to this dish for convenience and it is still amazing. I have never “skewered” my chicken just to save time. I typically bake my chicken tenderloins in the oven and then right before serving, throw them in with the pan with the veggies and toss. I serve mine over cauliflower rice and rice for the husband. This recipe allows for easy adaptions so that everyone is happy! As a child, it was always a treat going to a hibachi steakhouse where they cooked in front of you. I have fond memories of trying to catch shrimp in my mouth. Hands down, this recipe is just as good as you can get in the restaurant for more than half the price. Such a good recipe and serves nicely as leftovers.
