Fajita Stuffed Sweet Potatoes

I love how you can turn a plain boring sweet potato into a magical meal just by adding a combination of protein and veggies. These Whole30 compliant Fajita Stuffed Sweet Potatoes are the perfect lunch or dinner. The possibilities are endless when it comes to stuffing sweet potatoes. Sometimes I will use shredded pork, chicken and even throw a fried egg on top. Sweet potatoes are a great base for any meal.

To make life easier, I cooked my sweet potatoes in the Instant Pot and dinner was ready in 20 minutes. Feel free to get creative and try different combinations to come up with something magical. Don’t forget my number one tip….ALWAYS make extras for leftovers. At my house, leftovers save lives.

Fajita Stuffed Sweet Potatoes

A Mexican sweet potato stuffed with steak fajita meat and peppers.

  • Total Time: 30 minutes
  • Yield: 5 potatoes 1x

Ingredients

Scale

Sweet Potatoes

  • 5 sweet potatoes
  • 1 flank or skirt steak (thinly sliced)
  • 1 bag frozen peppers and onions ((I use Pic Sweet from Walmart))
  • ghee (as desired)
  • 1 tbsp olive oil (for cooking)

Gucamole

  • 2 large ripe avocados
  • 1/4 cup roma tomaotes (diced)
  • 3 tbsp red onions (thinly diced)
  • 1/2 tsp sea salt
  • 1 1/2 tbsp lime juice (fresh)
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper

Fajita Seasoning

  • 1/4 cup chili powder
  • 3 tbsp black pepper
  • 1 1/4 tbsp sea salt
  • 1 1/4 tbsp ground cumin
  • 1 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 tbsp paprika
  • 1 1/4 tsp parsley

Instructions

Instant Pot Sweet Potatoes

  1. Clean the skins of your sweet potatoes and place to the side.
  2. Place steamer rack/basket (the one that comes with your instant pot) in the Instant Pot and add 1 cup of water. Add your sweet potatoes to the top of the steamer rack.
  3. Cover and place vent or valve on lid to “sealed”.
  4. Use the manual mode on the Instant Pot and set to pressure cook on high for 18 minutes. (cooked 5 potatoes and they were medium sized)
  5. Allow pressure to release naturally. This process will usually take around 10 minutes.
  6. Once pressure is released, go ahead and open lid and remove potatoes.

Fajita Steak and Peppers

  1. Thinly slice your skirt or flank steak.
  2. Add your steak to a hot skillet with olive oil, and fajita seasoning (2 tbsp) along with your bag of mixed peppers and onions (I use 1 bag of the PicSweet brand from Walmart)
  3. Cook until steak, peppers and onions are at desired doneness.

Guacamole

  1. Peal your avocados and add to a bowl.
  2. Add your onions, tomatoes and seasoning and mix together with a fork until smooth.

Fajita Seasoning

  1. Mix all together and use 2 tbsp in fajita meat and peppers.

Stuffed Sweet Potaotes

  1. Stuff each sweet potato with fajita mixture and top with fresh guacamole.

✨Creamy Crab Dip✨ SAVE THIS RECIPE

This dip is the perfect appetizer for The Super Bowl this weekend. 

It’s Whole30, Keto, Paleo, Gluten & Dairy-Free!!

✨Crab Dip (Dairy-Free)✨

1 pound jumbo lump crabmeat, picked and drained 
8 ounces dairy-free cream cheese Kite Hill (or regular cream cheese will work)
1/2 cup mayonnaise 
1 tbsp Franks hot sauce
1 tbsp. lemon juice
⅓ cup chopped onions
3 garlic cloves, minced
1 tbsp vegan butter (or regular if not DF)
1 tsp salt
¼ tsp pepper
½ tsp onion powder
1 ½ tbsp nutritional yeast (or sub shredded cheese)
½ tsp paprika
½ tsp black pepper
2 tsp Old Bay seasoning
½ tsp ground mustard

1 tbsp chopped fresh parsley

✨Instructions✨

1. Preheat the oven to 350F. Heat a small skillet over medium-high heat and add the butter along with the minced garlic and onions. Cook for 2-3 minutes.
2. In a large bowl mix together the crab meat, dairy-free cream cheese, mayo, lemon juice, hot sauce, seasonings (except for nutritional yeast) along with the cooked onions and garlic. Mix together until combined.
3. Grease a 2-quart baking dish and add the crab mixture evenly. Sprinkle the top with nutritional yeast or you can sub cheese here.
4. Bake for 25-30 minutes. Enjoy!
