How to Make This Taco Casserole

Step 1: Preheat your oven to 375°F. In a large skillet, heat olive oil and cook the diced onion until translucent, about 5 minutes. Add garlic and cook for another 1-2 minutes.

Step 2: Add ground beef or turkey and cook until browned and fully cooked. Drain any excess grease. Stir in taco seasoning blend, salsa, tomato sauce, and beef broth.

Ingredients  

  • 2 lbs ground beef lean or ground turkey
  • 1 tbsp olive oil
  • 2-3 tbsp homemade taco seasoning mix or 1 packet taco seasoning
  • 1 cup chunky salsa
  • ¼ cup tomato sauce
  • 2 tbsp beef broth
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 3 cups shredded Mexican cheese blend or sub dairy free cheese of choice
  • 4 oz can green chiles
  • 15 oz can can corn drained
  • 15 oz can black beans drained and rinsed
  • 3-4 corn tortillas cut into 1″ strips (or substitute with low-carb or flour tortillas)
  • Salt and pepper to taste

Instructions 

  • Preheat your oven to 375°F (190°C). In a large skillet, heat 1 tbsp olive oil over medium heat. Add the diced onion and cook until it becomes translucent, about 5 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant. Add the ground beef or ground turkey to the skillet. Cook until browned and fully cooked through, breaking it up with a spatula as it cooks.Drain any excess fat.
  • Add the taco seasoning, stirring to combine. Stir in the salsa, tomato sauce, and beef broth. Mix well. Add the green chiles, corn, and black beans to the skillet. Stir to combine.
  • In a 9×13 inch baking dish, spread a thin layer of the meat mixture on the bottom. Arrange a layer of tortilla strips over the meat mixture. Add another layer of the meat mixture, followed by a layer of shredded Mexican cheese. Repeat layers, ending with a final layer of cheese on top.
  • Cover the baking dish with aluminum foil. Bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly. Remove the casserole from the oven and let it cool for a few minutes.
  • Serve warm, garnished with your favorite toppings such as Greek yogurt, guacamole, diced tomatoes, or fresh cilantro.
