Preheat your oven to 375°F (190°C). In a large skillet, heat 1 tbsp olive oil over medium heat. Add the diced onion and cook until it becomes translucent, about 5 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant. Add the ground beef or ground turkey to the skillet. Cook until browned and fully cooked through, breaking it up with a spatula as it cooks.Drain any excess fat.
Add the taco seasoning, stirring to combine. Stir in the salsa, tomato sauce, and beef broth. Mix well. Add the green chiles, corn, and black beans to the skillet. Stir to combine.
In a 9x13 inch baking dish, spread a thin layer of the meat mixture on the bottom. Arrange a layer of tortilla strips over the meat mixture. Add another layer of the meat mixture, followed by a layer of shredded Mexican cheese. Repeat layers, ending with a final layer of cheese on top.
Cover the baking dish with aluminum foil. Bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly. Remove the casserole from the oven and let it cool for a few minutes.
