How to make a sweet and creamy coconut mojito recipe as a cocktail or mocktail! This delicious, refreshing beverage is full of tropical flavors and has a sparkling, bubbly finish.

What Makes This Recipe Great
You may or may not have gotten a tropical vacation this summer, but I’ve got a way to transport yourself with this amazing tropical drink, Pineapple Coconut Mojito Recipe. Think classic mojito recipe combined with a pina colada (that perfectly creamy texture and tropical twist!).
My take on this classic Cuban cocktail features creamy coconut flavor from a can of coconut milk and coconut water, sweet tropical vibes from pineapple juice, and a zesty twist with fresh lime juice. Mint and pineapple are muddled for more fresh flavor, and the drink is topped with bubbly sparkling water for a crisp finish.

Ingredient Notes
- canned coconut milk or heavy cream: You can also use a can of unsweetened coconut cream, just keep in mind that it will be thicker than the coconut milk. Make sure to use unsweetened coconut milk, not “cream of coconut” as it will make the drink too sweet.
- pineapple juice
- coconut water
- non-alcoholic rum or coconut rum: You can also substitute for a white rum, or omit if you don’t want to use zero-proof or regular rum.
- fresh mint leaves
- fresh lime juice
- pineapple chunks
- simple syrup or sweetener of choice: You can use agave nectar, simple syrup, or another sweetener. Adjust the sweetness depending on your preferences.
- Lime sparkling water: I used Topo Chico. You can also use regular club soda, sparkling water, or soda water.
- granulated monk fruit and fresh lime zest: For a sugar rim.
Step-by-Step Instructions
In a cocktail shaker, muddle the pineapple chunks, lime wedges, and mint leaves with a cocktail muddler or the back end of a wooden spoon. Add the rest of the ingredients except for the sparkling water. Shake vigorously for 20-30 seconds.
Add the granulated monk fruit and lime zest to a plate. Rim a tall glass with lime juice and the lime sugar mixture.
Strain over ice cubes and top with a splash of club soda or sparkling water. Garnish with a pineapple wedge and/or a lime wedge and mint sprigs if desired.

- 2 oz coconut milk canned or sub-heavy cream
- 1.5 oz pineapple juice
- 1 oz coconut water
- 0.5-1 oz non-alcoholic rum or substitute coconut rum
- 5-6 mint leaves
- 1 lime quartered
- 2 tablespoons pineapple chunks
- 1-2 tablespoons simple syrup or sweetener of choice*
- Lime sparkling water. I used Topo Chico
Sugar Rim
- 2 tablespoons granulated monk fruit or coconut sugar
- 2 tablespoons fresh lime zest
Instructions
