Creamy Pineapple Coconut Mojito Recipe (Cocktail/Mocktail)
How to make a sweet and creamy coconut mojito recipe as a cocktail or mocktail! This delicious, refreshing beverage is full of tropical flavors and has a sparkling, bubbly finish.
Servings: 1 drink
Mocktail or Cocktail
- 2 oz coconut milk canned or sub-heavy cream
- 1.5 oz pineapple juice
- 1 oz coconut water
- 0.5-1 oz non-alcoholic rum or substitute coconut rum
- 5-6 mint leaves
- 1 lime quartered
- 2 tablespoons pineapple chunks
- 1-2 tablespoons simple syrup or sweetener of choice*
- Lime sparkling water. I used Topo Chico
Sugar Rim
- 2 tablespoons granulated monk fruit or coconut sugar
- 2 tablespoons fresh lime zest
In a cocktail shaker, muddle the pineapple chunks, lime wedges, and mint leaves. Add the rest of the ingredients except for the sparkling water. Shake vigorously for 20-30 seconds.
Add the granulated monk fruit and lime zest to a plate. Rim a glass with lime juice and the lime sugar mixture.
Strain over ice cubes and top with sparkling water. Garnish with a pineapple wedge.
Expert Tips
- I like using powdered serve or powdered monk fruit for low sugar. It dissolves smoothly and is sugar-free.

- You can use your favorite zero-proof rum for a coconut mojito mocktail recipe, or for the cocktail version, feel free to use your favorite coconut or silver rum (white rum and light rum are the same). Dark rum could work but it isn’t ideal for this recipe.
- To make simple syrup you’ll need ½ cup cane sugar and ½ cup water. In a small saucepan, heat the water and sugar until it dissolves and creates a simple syrup.
