Keto/Paleo Peanut Buttercup Fat Bombs

A simple and easy fat bomb recipe that tastes identical to a peanut butter cup without all the guilt. Keto, Vegan, Dairy Free and Gluten Free. These can be tailored to Paleo by subbing almond butter.

Who doesn’t love a good peanut butter cup? These babies are my number one weakness and will test my will power anytime I’m near them. We truly have a love/hate relationship, I hate them because I love them so much, haha. You know me though, I’m always on a mission to recreate my most beloved treats in a healthy way. These peanut butter fat bombs turned out AAAMAZING and are legit delicious. They will for sure save you on those late night where you wanna be a scavenger and tear through your kids Halloween bag.
I love this recipe so much because it can be whipped up in a flash and takes no time to harden in the freezer. These are great if you are doing Keto and need a little boost of healthy fats throughout the day. They are also great for a kids snack, Eloise, my four year old eats these all the time for a afternoon treat.

Keto Peanut Buttercup Fat BombsEven of you aren’t following the low carb or keto lifestyle, these are a great snack for anyone. The peanut butter mixed with the coconut oil, coco powder and stevia is sure give you sweet tooth a quick “fix.” I use Stevia as my main sweetener in this recipe, but if you are not worried about carb count, then sub real maple syrup. In addition, I am currently loving ChocZero’s maple syrup that is sweetened with Monk Fruit. It honestly tastes like the real thing and is all natural with very little carbs and sugars. As far as my dark chocolate, I am a big fan of Lilly’s and always try to keep the chocolate chips or dark chocolate bars on hand.

If you are living the Paleo lifestyle and want to try these out, then substitute almond butter for the peanut butter and you will be good to go!

What are Keto fat bombs?

A fat bomb is a combination of healthy fats created to help people who eat a lower carb diet include more healthy fats into their diet. Fat bombs can be eaten as a snack or in the morning to support energy and focus. They even serve as a great dessert alternative if you are needing a little something sweet after a meal.

Won’t eating high fat make me fat?

FALSE…Eating high quality fat won’t make you fat. If eaten correctly, fat actually helps you burn more calories. In order for our bodies to function properly, we must have fat in our diets. Make sure that if you are eating high fats to watch your sugar and carb intake. Carbs and sugar can often lead to overconsuption and that is what causes weight gain, not the fact that you are eating high quality carbs.

Chocolate & Peanut Butter Fat Bombs

A simple and easy fat bomb recipe that tastes identical to a peanut butter cup without all the guilt. Keto, Vegan, Dairy Free and Gluten Free.

  • Total Time: 6 minutes
  • Yield: 12 mini cups 1x

Ingredients

Scale

Chocolate Layer

  • 1/2 cup melted coconut oil
  • 12 drops liquid stevia
  • 2 tbsp unsweetened cocoa powder
  • 1/2 teaspoon pure vanilla extract

Peanut Butter Layer

  • 1/2 cups peanut butter (no sugar added, (Sub almond butter for paleo))
  • 1 small pinch sea salt
  • 2 tbsp melted coconut oil
  • 1 tbsp syrup-sugar free ( SEE NOTES: ChocZero (sweetened with monk fruit) or sub 10 drops of liquid stevia)
  • dark chocolate (shavings)

Instructions

  1. Line 12 mini muffin tins with mini liners.
  2. Mix the melted coconut oil, stevia, cocoa powder and vanilla together in a small bowl. Add halfway to each mini muffin liner.
  3. Put the muffin tins in the freezer for at least 10 minutes. While the chocolate layer is setting, mix together the peanut butter, melted coconut oil, monk fruit syrup or stevia drops, and a pinch of sea salt.
  4. Pull the chocolate mixture from the freezer and pour the peanut butter mixture over the top until each liner is full. Top each peanut butter cup with dark chocolate shavings.
  5. Put back into the freezer until hard. Will last a couple of months in the freezer.

✨Hummus Board✨

1 17oz container of Hummus
1/2 cup cherry tomatoes, cut in half
1/3 cup diced cucumbers
1/3 cup Kalamata olives
1/3 cup feta 
3 tbsp red onion
salt/pepper to taste
2 tbsp olive oil, for drizzle
Fresh dill for garnish
Naan bread, crackers, or chips for dipping

Note: If you don’t want to add it to a board, this works just as yummy in a large bowl or platter.

✨We all need quick meals and I’m obsessed with these  English Muffin Tuna Melts. They can be on the dinner table in under 15 minutes and can be tailored to be gluten and dairy free. 

 ✨ENGLISH MUFFIN TUNA MELTS✨
*3 English muffins split in half (gluten-free or regular)
*Butter (to toast muffins) optional
*6 slices Colby Jack cheese or cheese of choice (you can also use dairy-free cheese)
*6 slices red onion, thinly sliced (Optional, but adds nice crunch and flavor)
*Three 5-ounce cans of white meat tuna packed in water, drained
*2 tablespoons finely chopped yellow onion
*2 tbsp dill relish or 2 large pickle spears, chopped
*1/3 cup homemade or mayo of choice
*1 tablespoon pickle juice
*1/4 teaspoon ground black pepper
*1/2 teaspoon kosher salt (or to taste)
*Parsley for garnish

✨Instructions✨
1. MIX THE TUNA SALAD: In a medium mixing bowl, add the canned tuna and break up the tuna with a fork. Transfer the chopped onions, relish, pickle juice, salt/pepper, and mayo. Mix together until combined. 
2. TOAST MUFFINS: You can choose to toast the English muffins with butter under the broiler for 2-3 minutes. However, if you don’t want to toast before adding the tuna, that’s okay. It still turns out great without toasting muffins first. 
3. BUILD THE MELTS: Divide the tuna mixture evenly among each of the toasted English muffins. Add a thin slice red onion along with a thin slice of Colby Jack cheese over the top.  Return to the oven and bake for 7-8 minutes in a 375F oven or until cheese is melted. Garnish with fresh parsley and enjoy!

Tortilla (gf or regular)
Sour cream (df or regular)
