30 Minute Mexican Frittata with Beef

My love for a good frittata recipe runs deep. Frittatas are extremely versatile and can be served for any meal during the day. My brand-new Mexican Frittata serves the entire family in a nourishing and filling way because the main ingredient is 93/7 Ground Beef. It is also filled with creamy eggs, onions, tomatoes, green chilies and topped with avocado slices, tomatoes and drizzled with avocado ranch.

As a momma who runs the household and kitchen, I have to be strong, both physically and mentally. I love adding beef to my recipes because the nutrients found in beef keep me feeling fueled and focused for hours. It is equally important that my husband and kids eat foods, such as beef, that will keep them full until the next meal and give them enough strength to get through their day in a positive way.

I love the fact that this frittata recipe can be tailored in 3 different satisfying ways; adult, child and baby. Sometimes a big meal like this can be overwhelming for kids and toddlers. I love deconstructing recipes in a way that takes the stress away and allows my kids to approach it in an easy way. Additionally, fruit is a great side dish to add with this meal to keep it healthy and fresh.

Cooking a healthy meal sometimes means that you have to make 15 different options to please everyone. 4 years ago when I decided to change my lifestyle to Paleo, I made a rule that I would only cook one meal and everyone would either choose to eat it or figure out their own meal. Needless to say, my husband began to get on board and now enjoys every meal I create.

In my kitchen, I love cooking and creating recipes with beef. As I mentioned earlier, that’s the main ingredient in my Mexican Frittata recipe. I love the fact that beef gives me, and my family the strength we need to be our best selves. In addition, I love the fact that beef has protein, iron and zinc that support healthy brain development and function now and for the future.

Can this Mexican Frittata be frozen?

Absolutely! I cut this Mexican Frittata into portion sized squares and put add to an air tight freezer container. I usually will make a big batch and heat up for an easy weekday breakfast for me and the family. They will last in the freezer for up to 3 months if stored correctly.

[wpurp-searchable-recipe]Mexican Frittata with Beef – This Mexican inspired Frittata with beef is filled with tons of flavor that is sure to satisfy anyone at the table. It can be served in 3 versions; kid, adult and baby. It’s Whole30. Keto and Paleo compliant. – Frittata: ground beef ((93/7)), garlic (,minced), sweet yellow onion, eggs, tomato sauce ((no sugar added)), compliant taco seasoning ((see notes )), ghee, lime juice, canned coconut milk, green chilies, nutritional yeast, cherry tomatoes, (,quartered), avocado (,sliced), Avocado Ranch, Cilantro for garnish, Avocado Ranch: mayo, avocado (, pitted), salt ((reduce to 1/2 tsp if needed)), dill weed, apple cider vinegar, canned coconut milk, dried parsley, dried chives, onion powder, garlic powder, cracked pepper, , Heat a cast iron skillet over medium heat with 1 tbsp ghee.; Preheat the oven to 350°F; Add the pressed garlic along and chopped yellow onion to the skillet. Brown together for a minute or two.; Add in the Ground Beef and brown for 5- 6 minutes. Once browned add in the 2 tbsp tomato sauce and 1 1/2 tbsp taco seasoning. ; Meanwhile, whisk the 8 eggs along with the coconut milk, 3/4 cup cherry tomatoes, quartered, nutritional yeast, green chilies and lime juice until completely combined.; Pour the egg mixture on top of everything in the skillet. Make sure the mixture is spread evenly over the beef for even cooking.; Add the cast iron skillet to the oven and allow to cook 25-30 minutes.; For the avocado ranch, add all the ingredients and mix in a blender or using an immersion blender and blend until creamy.; Top with the remaining cherry tomatoes, 1 avocado, sliced, cilantro and drizzled with avocado ranch. Servings: 8 people

Ingredients  

Frittata

  • 1 lb ground beef (93/7)
  • 1 clove garlic ,minced
  • 1/2 sweet yellow onion
  • 8 large eggs
  • 2 tbsp tomato sauce (no sugar added)
  • 1 1/2 tbsp compliant taco seasoning (see notes )
  • 1 tbsp ghee
  • 1 1/2 tbsp lime juice
  • 2 tbsp canned coconut milk
  • 2 tbsp green chilies
  • 2 tbsp nutritional yeast
  • 1 cup cherry tomatoes (,quartered)
  • 1 small avocado ,sliced
  • 2 tbsp Avocado Ranch
  • Cilantro for garnish

Avocado Ranch

  • 1 cup mayo
  • 1 small avocado , pitted
  • 1 tsp salt (reduce to 1/2 tsp if needed)
  • 2 tsp dill weed
  • 1 tsp apple cider vinegar
  • 2 tbsp canned coconut milk
  • 1 tbsp dried parsley
  • 1 tbsp dried chives
  • 1/2 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp cracked pepper

Instructions 

  • Heat a cast iron skillet over medium heat with 1 tbsp ghee.
  • Preheat the oven to 350°F
  • Add the pressed garlic along and chopped yellow onion to the skillet. Brown together for a minute or two.

    Grew up in PA and now live 30 minutes from Philadelphia. Could not give up cheesesteaks… This is the Best Flavor you will find!! Mac’s Awesome sauce complements the ingredients and you will Not miss the bun!!

  3. This Mexican frittata is so good! I’ve made it 3-4 times and every time it’s a crowd pleaser. Due to less grocery trips lately, I substituted shredded chicken instead of beef and that version was also great. Thanks for continually making great, versatile recipes to share!

  5. How long would this last in the fridge? Could I make it and divide it up for breakfast for the week or will it get gross if not eaten fresh?
