‘Tis the season for all things cookies. I love a good cookie recipe, especially my boxed cake mix cookie recipe. It requires minimal ingredients with high quality taste. These boxed cake mix cookies that I have included in this post is, Mint Chocolate, Red Velvet and Snicker-doodle. Cookie making has never been easier!

These box cake mix cookies are my go-to recipe because they are so easy and cheap to make. They are so versatile and you can ultimately make any kind of cookie you can imagine with a simple box cake mix.

Red Velvet, Mint Chocolate and Snickerdoodle are always my favorite types of cookies to make. I made 3 batches of cookies in under an hour and it took 4 ingredients or LESS. That’s right, only 4 ingredients to get the cookies of your dreams. They are literally fool proof and will come out perfect every single time.

How Do You Make Box Cake Mix Cookies?

First, select the box cake mix you are wanting to use. Next mix together 1/2 cup oil 2 large eggs and 1/2 tsp baking powder and 1/2 cup of mix ins of choice, such as chocolate chips, sprinkles, or etc… Finally roll into a ball, pop on a cookie sheet and bake. Seriously, it is that easy.

Tips For Making The Perfect Cookies?

  • Make sure not to over bake. Bake these cookies 9-10 minutes. Keep a close eye on your cookies because all ovens tend to cook differently.
  • Make sure all your batter is completely combined.
  • Add in eggs one at a time.
  • Line your baking sheet with parchment paper or a baking mat.
  • Space cookies evenly on baking sheet.
  • Use an ice cream scoop to get the perfect size cookies every single time.
  • Rotate your pan during cooking to make sure all cookies are evenly cooked.
  • Use a cooling rack

What are the different types of flavors you can make?

  • Double Chocolate: Chocolate cake mix + Chocolate Chips
  • Red Velvet: Red Velvet Cake Mix + White Chocolate Chip
  • Snickerdoodle: White Cake Mix + Cinnamon and Sugar
  • Chocolate Chip: Yellow or White Cake Mix + Chocolate Chips
  • Mint Chocolate: Chocolate Cake Mix + Andes Mints or Mint Chocolate
  • Lemon Cookies: Lemon Cake Mix + White Chocolate Chips
  • Strawberry Cookies: Strawberry Cake Mix + White Chocolate Chip

Three Delicious Box Cake Mix Cookies

These box cake mix cookies are the easiest cookies you will ever make. With only 4-5 ingredients and 20 minutes out of your day, you will have yourself the perfect cookies every single time. 
Prep Time: 5 minutes
Cook Time: 10 minutes
Servings: 22 cookies

Ingredients  

Red Velvet Cookies

  • 1- Red Velvet Box Cake Mix
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/2 cup white chocolate chips
  • 1/2 tsp baking powder

Mint Chocolate Cookies

  • 1- Chocolate Box Cake Mix
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/2 cup mint chocolate or Ande's Chocolate Mints chopped
  • 1/2 tsp baking powder

Snickerdoodle Cookies

  • 1- White Box Cake Mix
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/4 cup granulated sugar
  • 1 tbsp cinnamon
  • 1/2 tsp baking powder

Instructions 

  • Preheat oven to 350F and line a baking sheet with parchment paper. 
  • In a large bowl, add the cake mix, vegetable oil, baking powder, and one egg at a time and whisk together until completely combined. 
  • Using a spatula, fold in the mix ins of choice. I used mint chocolate or Andes mint chocolate for the Mint Chocolate Cookies and white chocolate chips for the red velvet cookies. 
  • Scoop the dough with a cookie scoop or in 1 1/2 tbsp portions and roll into a ball. If making the snikerdoodle cookies, place the sugar and cinnamon on a plate a mix, then roll the cookie dough balls in the sugar mixture and completely coat.
  • Arrange the cookie dough balls on the baking sheet 2-3 inches apart. 
  • Back for 9-10 minutes and remove from the oven and allow to cool for 10 minutes. 
  • Transfer to a cooling rack to finish cooling.

Notes

  • I used Duncan Hines for my box cake mix.
  • Make use to keep an eye on your cookies at the 8-9 minute mark. Remember, every oven cooks differently.
