Greek yogurt bark is a refreshing and easy-to-make treat that captures the tangy, sweet flavors of a classic key lime pie in a healthier format. You simply mix Greek yogurt with protein powder, key lime juice, and a touch of honey or Swerve (or a little maple syrup), then spread it evenly on a baking sheet. Crushed graham crackers are sprinkled over the top for a delightful crunch. The bark is then frozen until firm and broken into pieces for a perfect snack

  • Plain Greek yogurt: Non-fat or low-fat for higher protein. You can substitute any dairy-free yogurts of your choice. You can also use vanilla yogurt if desired. 
  • key lime juice
  • powdered swerve: Or substitute a little honey or pure maple syrup. Adjust the sweetness level to taste.
  • vanilla extract
  • lime zest
  • graham cracker crumbs: I used Simple Mills Honey Cinnamon Sweet Thins. Use gluten-free or regular graham crackers. 
  • toasted coconut flakes: Unsweetened.
  • vanilla protein powder: Regular or dairy-free.

Step-by-Step Instructions

  1. In a medium mixing bowl, combine the Greek yogurt, key lime juice, protein powder, lime juice, lime zest, powdered swerve (or sweetener of choice, and vanilla extract. Mix until smooth and well combined.
  2. Line a baking sheet pan with parchment paper or a silicone baking mat. Spread the yogurt mixture evenly over the prepared baking sheet, creating a thin, even layer.
  3. Sprinkle the crushed graham crackers, toasted coconut, and lime zest evenly over the yogurt layer. Place the baking sheet in the freezer for at least 2-3 hours, or until the yogurt mixture is fully frozen and set. Once frozen, remove the baking sheet from the freezer. Lift the parchment paper or silicone mat from the baking sheet and break the frozen yogurt bark into pieces with a sharp knife or your hands. 
  4. Enjoy immediately or store the bark pieces in an airtight container in the freezer for up to 2 weeks. Store the bark in a single layer or between sheets of parchment paper to prevent sticking

  • If you don’t want a super icy consistency, I recommend using full-fat Greek yogurt! However, I’ve used light and the ones with lower fat and it still turned out delish.  
  • Yogurt bark recipes are super easy to customize to your liking. Use this recipe as a base and add try mixings and toppings of your choice like fresh strawberries or other fresh berries like blueberries, raspberries, or blackberries. Fresh fruit like bananas also work. Other favorite toppings include nut butter like peanut butter or almond butter, dark chocolate chips, granola, nuts, and more! 

Storage Tips

Why is my yogurt bark icy? 

I’ve noticed this happens with lower-fat yogurt and if it’s been in the freezer too long. To avoid this, use full-fat yogurt (Greek or whole milk yogurt) as the higher fat content decreases this issue. Make sure to eat within a 2-week time frame. If the icy crystals don’t bother you, use any type of yogurt you want. 

How long can you keep yogurt bark in the freezer?

I recommend eating your healthy frozen yogurt bark within 2 weeks for best results.

  • 2.5 cups Greek yogurt plain, non-fat or low-fat for higher protein can substitute dairy-free yogurt of choice.
  • 3.5 tbsp key lime juice
  • 2 tbsp powdered swerve or sub 1 tbsp honey. Adjust sweetness level to taste
  • 1 teaspoon vanilla extract
  • 1 tablespoon lime zest
  • 1/3 cup crushed gluten-free graham crackers I used Simple Mills Honey Cinnamon Sweet Thins
  • 1/4 cup toasted coconut unsweetened
  • 1 scoop vanilla protein powder regular or dairy-free
