Jerk Chicken with Grilled Pineapples

I am a big Jerk Chicken fan and have tried a lot in my days. In my opinion, my new Jerk Chicken recipe is one of the best and is exploding with all kinds of amazing flavors. This recipe is super easy and will give you a break from plain boring chicken.

Jerk Chicken

When cooked correctly, this chicken has the most amazing and crispy skin that is so satisfying. The seasoning is what give the chicken texture and crunch. All the flavors such as, thyme, cinnamon, garlic, salt, cayenne pepper, allspice, paprika, and pepper along with pineapple and lime juice brings creates the perfect Jerk Chicken you will ever taste.

There are a couple of ways to cook this chicken, but my favorite is using my Traeger Smoker. If smoking, I suggest using the Apple pellets. These give the chicken a sweet flavor that pairs nicely with the pineapple juice. To make it even better. I will throw some fresh pineapple slices on the grill right before serving and add to the top of the chicken before serving.

Will I be able to get that crispy skin for this Jerk Chicken if I use the oven method?

Yes, you sure can. There will be a difference in taste due to the smokey flavor of the smoker. Cooking the chicken using the oven method will still give you a juicy and flavorful chicken, just in a different way.

For the smoker version, I put the chicken on top of the pineapple can with the juice and extra seasoning. This just allows the flavor to really soak in as the chicken smokes. If you use the oven method, I will just add the lime and pineapple juice and brush over the chicken before adding the seasoning. I will also baste as the chicken cooks to ensure the flavor soaks in nicely.

Jerk Chicken with Grilled Pineapples

This Jerk Chicken recipe is a well-seasoned whole chicken, drenched with lime and pineapple juice and cooked to a crispy perfection. There is a smoker and oven method included. This recipe is Whole30, Paleo and compliant.

Ingredients

Scale

Seasoning

  • 1 tbsp garlic powder
  • 1 tbsp allspice
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 1/2 tsp paprika
  • 1/4 tsp dried thyme
  • 1 tbsp dried parsley
  • 1 tsp cayenne pepper
  • 2 tsp cumin
  • 1/4 tsp cinnamon
  • 3/4 tsp onion powder

Chicken

  • 1 5lb whole chicken
  • 1 20 oz can pineapple slices ((In juice only, no sugar added))
  • 1 slices can pineapplewith juice
  • 2 large Limes ((divided))
  • 1 tbsp olive oil

Instructions

Smoker Method

  1. Turn smoker to 225 F and preheat smoker, lid closed for 15 minutes.
  2. As the smoker heats, prepare the chicken by combining the spice rub in a jar and mix until combined.
  3. Open the pineapple can and remove the slices, but leave the juice.
  4. Unwrap the chicken and cover the chicken with olive oil and squeeze a whole lime juice over the front and back.
  5. Sprinkle the seasoning generously over the front and back of the chicken. Don’t be scared to over season. This will give the chicken a great crust.
  6. Sprinkle any remaining seasoning in the can with pineapple juice along with 1/2 lime juiced and remove the paper from the can.
  7. Place the pineapple can on a sheet pan. Place a chicken leg in each hand and carefully place bird cavity over the pineapple can. Transfer the sheet pan to your smoker.
  8. Cook the chicken for 2.5 to 3 hours or until the thermometer reads 160℉ when inserted into the thickest part of the breast.
  9. Remove the chicken from the grill and allow to sit until the internal temperature rises to 165 F. As the breast rests, the chicken will continue to cook. Enjoy!

Oven Method

  1. Preheat oven to 350 degrees F
  2. Unwrap the chicken and place in a roasting pan. Open the pineapple can and place the juice in a medium bowl along with 1 lime juiced.
  3. Cover the whole chicken with olive oil and use a basting brush to brush on the pineapple and lime juice mixture over the front and back of the chicken.
  4. Sprinkle the seasoning generously over the front and back of the chicken. Don’t be scared to over season. This will give the chicken a great crust.
  5. Bake uncovered 1 hour and 15 minutes in the preheated oven. Cook until the internal temperature rises to 165 F.

Peach season is the sweetest season. Celebrate by making these easy and delish Peach & Brie Quesadillas.
 
🍑Peach & Brie Quesadillas🍑
✨2 gluten free tortillas or regular tortillas
✨4 slices Brie cheese or dairy free cheese 
✨4 slices prosciutto (2 per quesadilla)
✨2-3 peaches, sliced
✨2 Tbsp butter, divided 
✨2-3 Tbsp golden monk fruit sweetener, brown swerve or brown sugar 
✨1 tablespoon hot o regular honey. I prefer hot

1. Cook down the sliced peaches in a tablespoon of butter and monk fruit sweetener. Cook about 5 minutes or until peaches are soft. 
2. Add 2 slices of prosciutto to a tortilla with 3-4 cooked peach slices and Brie or DF cheese. 
3. Add a tablespoon of butter to a skillet over medium heat and add in each quesadilla. Cook u tip browned.
4. Drizzle with hot honey or reg honey and fresh basil. 
5. Enjoy

Jalapeno Bacon Aioli:
1 cup mayo
3 pieces cooked bacon, chopped
1 1/2 garlic cloves, peeled and crushed
1/2 jalapeno pepper with seeds removed (add the other half if you like it really spicy)
1 tsp lime juice
Salt & pepper to taste
Directions:
Combine everything in a mason jar and blend together with an immersion blender until combined. 
 
Burger:
1.5 lbs ground beef
1.5 tablespoons Worchestire sauce
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 tsp salt
1/4 tsp pepper
6 slices pepper jack cheese
6 pieces lettuce
Jalapeño slices and crispy onions for topping 
Directions:
1. Heat a large cast iron skillet or grill to medium/high heat. Mix the meat in a large bowl with the seasoning and the Worchestire sauce. Form 6- 8 patties depending on how big you want them. 
2. Add 2 tablespoons avocado oil and cook the burger for 4 to 5 minutes per side. Top each burger with a slice pepper jack cheese in the last minute of cooking. 
3. Serve the patty on a butter bun with lettuce, a tablespoon of the aioli, onions straws, and fresh sliced jalapeños.

✨Say hello to the ultimate summer side dish, Creamy Chive and Onion Corn. I have been making this for my family for years and they can’t get enough. It requires minimal ingredients and can be made in a flash. Good news, it can also be made dairy-free! 👇🏼

✨Creamy Chive and Onion Corn✨
2 12oz bags frozen corn 
2 tablespoons butter or vegan butter 
8 oz container chive and onion cream cheese or for dairy free sub Kite Hill’s version 
3/4 cup heavy cream or for dairy free use the silk dairy free heavy cream
Salt/pepper to taste
Fresh chives for garnish 

1.Heat a skillet over medium heat and add in the butter and corn. Cook for about 4-5 minutes until corn has cooked through. 
2. Add in the cream cheese and heavy whipping cream and mix together until combined. Allow to come to simmer for a 4 minutes or so until the cream cheese is melted and warm. 
3. Season with salt and pepper and garnish with fresh chives. 
4.Enjoy!
