This deliciously creamy, blue-hued empress gin cocktail is a fun, festive drink to share over the holidays! Fittingly called the Jack Frost Cocktail, you will love the balance of vanilla, pineapple, and blueberry flavors alongside Empress 1908 gin. So easy, and so delicious!
What Makes This Recipe Great
The holidays are such a delightful, festive time full of gatherings and parties, good food, and (strong) drinks! A good signature cocktail makes things even more fun for the adults, so I wanted to create a beautiful (but easy!) drink to add to the festivities.
Introducing, my version of the Jack Frost Cocktail- made with gin! This empress gin cocktail is made with empress 1908’s beautiful purple gin, vanilla ice cream, pineapple juice, and blueberry syrup. It’s creamy, sweet, and oh so good!
Complete with a buttercream icing rim and a pale blue hue, this Jack Frost drink will be the hit of the party. It’s also easily made into mocktail form by omitting the gin, so kids and adults can enjoy a non-alcoholic version. Yum!
Ingredient Notes
Jack Frost Cocktail
- Empress 1908 Gin: I absolutely love this gin. It’s smooth and delicious and actually comes purple, so getting the blue hue of this drink is pretty easy!
- Vanilla Ice Cream: Feel free to substitute coconut milk ice cream or your favorite vegan version for dairy-free.
- Pineapple Juice: You can use a small can of pineapple juice or blend fresh or frozen pineapple with water to make this.
- Blueberry Simple Syrup
Rim
- Dip your glass in buttercream icing and sugar sprinkles or shredded coconut for extra fun sipping.
Step-by-Step Instructions
- Add everything to a blender and blend until smooth for 10-15 seconds.
- Rim a glass with buttercream icing and sugar sprinkles or shredded coconut.
- Pour in the glass and enjoy!

- Dairy-Free: Use coconut milk ice cream or your favorite vegan vanilla ice cream for a dairy-free version. Skip the buttercream rim, or find a non-dairy buttercream alternative.
- Non-Alcoholic: Omit the gin and you can enjoy this cocktail sans alcohol.
- Gin: I made this empress gin cocktail with the purple Empress 1908 gin, but you can swap that for your gin of choice. Just be aware that the blue hue of the drink will be duller if you don’t use empress. You can always add food coloring to get a darker shade.
- Sweetness: If you like your drinks less sweet, cut the simple syrup and pineapple juice in half.
- Deeper Color: For a deeper blue color, add a tiny bit of light or cornflower blue food coloring.

Typically a Jack Frost drink is made with blue curacao syrup, rum, pineapple juice, and cream of coconut. The glass is dipped in light corn syrup and coconut flakes. For my recipe, I switched things up and made a gin version with some other fun swaps and details.
It’s a really lovely gin for a couple of reasons. While it tastes like a classic gin, it has a deep purple color that makes it such a beautiful liquor to make cocktails with! It’s fun, smooth, and so pretty!
