Chicken is a protein that most all families eat. I am constantly creating new recipes to keep our love for chicken fresh. My new Greek Chicken will make you fall in love with chicken all over again. It is tender and juicy and infused with all the perfect Greek flavor. The best part about this dish is that it is Whole30, Keto, and Paleo compliant.

One of my favorite olive oil brands to use is Pompeian. I use their smooth blend forย sautรฉing veggies and proteins and I use their robust blend for all of my dressings and marinades. The main key to juicy and tender chicken is marinating it overnight. My Greek marinade is filled with amazing flavors that brings to life a boring piece of chicken. Simply combine olive oil, oregano, parsley, basil, and garlic cloves. Transfer this to a bag along with the chicken tenders and refrigerate overnight.

To serve, add these skewers over arugula served with some seasoned olives and drizzled with Greek olive oil dressing.ย  Not only does this serve as an amazing weeknight or weekend meal, but it also is a great dish to prep on Sunday for lunched during the week. For a meal prep option, make a big batch of this Greek Chicken along with cooking a big pan of roasted veggies. Store these separate and build quick meals throughout the week.

Greek Chicken

Ingredients needed for this Greek Chicken:

Marinated Chicken Tenders

  • Chicken tenders
  • Skewer sticks
  • Extra Virgin Olive Oil
  • Black cracked pepper
  • Lemon, juiced
  • Garlic
  • Sea salt
  • Dried oregano
  • Dried basil
  • Garlic powder

How to make:

  1. Whisk together all of the ingredients for the marinade and transfer to a large freezer bag and add the chicken tenders. Marinate 4-8 hours
  2. Remove chicken from the marinade and add 2 chicken tenders to each skewer stick.
  3. Heat a medium skillet over medium-high heat and add 2 tbsp of olive oil and add in each skewer. Allow to cook for 6 minutes on each side or until juice runs clear.
  4. Remove the chicken skewers and add on top of a bed of fresh arugula and serve with olives and drizzle with lemon juice and a little Greek olive oil dressing.

Greek Olive Oil Dressing

  1. Add all of the ingredients to a bowl and mix together with a spoon until combined.

How to use this Greek Dressing?

My Greek olive oil dressing can be used in many different ways. Use it to bring amazing flavor to veggies, proteins and salads. It reminds me of the olive oil blend that was served with bread at Macaroni Grill. As a child, this was one of my favorite restaurants to go to. As we would wait for our food, we would dip the bread in their olive oil blend as an appetizer. It was the best. It was seriously the best stuff in the entire world.

Greek Chicken on a Stick

A juicy and tender Greek chicken on a stick drizzled with a Greek olive oil blend with lemon juice. This dish is Keto, Paleo and Whole30.
Prep Time: 10 minutes
Cook Time: 15 minutes
Servings: 3 large skewers or 3 people

Ingredients  

  • Marinated Chicken Tenders6 chicken tenders
  • 3 skewer sticks
  • 2 tbsp Smooth Pompeian Extra Virgin Olive Oil
  • Greek Marinade1/2 cup Robust Pompeian Extra Vigin Olive Oil
  • 1/2 tsp black cracked pepper
  • 1 large lemon juiced
  • 2 clove garlic finely diced
  • 1/2 tsp sea salt
  • 1 tbsp dried oregano
  • Greek EVOO Dressing1/2 cup Robust Pompeian Extra Vigin Olive Oil
  • 1/2 tsp dried parsley
  • 1/2 tsp dried basil
  • 1/2 tsp sea salt
  • 1/2 tsp pepper
  • 1/4 tsp garlic powder add 1/4 tsp more if desired
  • 1/2 tsp oregano

Instructions 

  • Whisk together all of the ingredients for the marinade and transfer to a large freezer bag and add the chicken tenders. Marinate 4-8 hours
  • Remove chicken from the marinade and add 2 chicken tenders to each skewer stick.

Notes

  • You can remove the skewers if you don't care to have them on a stick.
  • The dressing and chicken will both last a week in the fridge if stored in an air tight container.ย

    This is one of my new favorite ways to cook chicken! It turns out so juicy and tender itโ€™s unbelievable. The only difference in the way I make it is I cook it on the grill. Iโ€™ve also left it in the marinade for 24 hours and it turns out great! LOVE LOVE!

    My family just loves this recipe (me too)! They give me a hard time about Whole30 recipes, but they have no idea this is Whole30 compliant. :~) I always marinate for 24 hours and its so flavorful. I am going to try it on the grill like Shannon recommended

    This has been on our weekly rotation this spring, and I plan on continuing to make it throughout the summer. It is delicious! Iโ€™ve been eating Paleo, and I mixed a little Mayo in the dressing for a creamier taste/texture, and it was great, also. I dipped everything in it! Thank you for such an easy, quick recipe.
