This refreshing strawberry coconut mocktail is a sweet and tart summer beverage made with coconut water, pineapple juice, lime juice, coconut syrup, strawberry puree, and zero-proof gin (or regular if desired). It’s topped with a coconut cream popsicle for the most deliciously fun poolside cocktail!

What Makes This Recipe Great

I don’t know about you, but for me, coconut is the flavor of summer. It’s fresh, fruity, and tropical just like summers should be! I’ve created a super fun Strawberry Coconut Mocktail that is perfect for hot summer days, relaxing pool days, or family-friendly beach gatherings! 

Filled with hydrating coconut water, sweet and tart pineapple, lime, and strawberry, then topped with a coconut cream popsicle (or canned coconut milk) to add a dreamy, creamy element full of delicious tropical fruit and coconut flavors. Add a sugar or salt rim if desired, and garnish with a flower or umbrella to make this drink even more fun and festive!

Ingredient Notes

  • non-alcoholic gin: For a mocktail, use zero-proof gin. For the cocktail version, use a regular gin of choice. You can also use an alternative alcohol like rum or vodka if preferred. 
  • coconut water
  • pineapple juice
  • fresh lime juice
  • coconut syrup
  • strawberry puree
  • coconut cream popsicle: If you don’t want to use popsicles, feel free to add a splash of canned coconut cream or coconut milk to the drink. 

Strawberry Puree

  • Powdered swerve or powdered sugar

Step-by-Step Instructions

  1. Strawberry Puree: Add the strawberries and powdered swerve to a blender. Blend on high for 15-30 seconds or until everything is combined.
  2. Cocktail: To a cocktail shaker, add the gin, strawberry puree, coconut water, lime juice, coconut syrup, and pineapple juice. Shake vigorously for 20 seconds. Pour the cocktail over ice cubes and add in a coconut cream popsicle. Garnish with a pretty flower and enjoy!

Ingredients  

  • 1 oz non-alcoholic gin sub regular or omit
  • 2 oz coconut water
  • 2 oz pineapple juice
  • 1 oz fresh lime juice
  • 1/2 oz coconut syrup I used Torani
  • 1.5 oz strawberry puree
  • 1 coconut cream popsicle

Strawberry Puree

  • 1 tablespoon powdered Swerve or powdered sugar
  • 7 large strawberries

Instructions 

  • Strawberry Puree: Add the strawberries and powdered swerve to a blender. Blend on high for 15-30 seconds or until everything is combined.
  • Cocktail: To a cocktail shaker, add in the gin, strawberry puree, coconut water, lime juice, coconut syrup, and pineapple juice. Shake vigorously for 20 seconds. Pour the cocktail over ice and add in a coconut cream popsicle. Garnish with a pretty flower and enjoy!
