Instant Pot BBQ Meatball Stuffed Sweet Potatoes

Who doesn’t love a stuffed sweet potato? This BBQ meatball stuffed sweet potato recipe is Whole30 and Paleo compliant and serves as an easy weeknight meal that they whole family will love. Additionally, they serve as a great appetizer for a summertime BBQ or family gathering. There are a lot of different ways you can recreate this recipe to make it different and delicious. Simply make a big batch on Sunday and recreate a meal or two during the week. Add on top of salads, stuff in sweet potatoes or add to zucchini noodles.
When I cook, I usually cook one meal and recreate it in a kid version. My sweet Eloise, who is 3 years old doesn’t always like how I make our meals, so I will tweek it just a little so she can enjoy it in a kid friendly way. For this meal a stuffed sweet potato is really hard for her to eat, so I deconstruct the meal so it isn’t overwhelming for her. I will serve her meatballs cut up along with fruit, the sweet potato smashed up with a little ghee and cinnamon and the ranch coleslaw on the side. I never cook additional food for her. She will eat what I cook, or she won’t eat at all, that’s our rule. This has been a hard battle to fight, but now that I have been consistent, she never complains and always eats what’s on her plate.
Feel free to make your own BBQ sauce, but for this recipe I wanted it to be easy and convenient, so I used Tessemae’s BBQ Sauce. For the ranch coleslaw, I also used Tessemae’s Ranch because it is easy and delicious. If I didn’t have this ranch on hand, I would just whip up my homemade version, click here to grab that recipe.
If you need a yummy meal and even better leftovers for the week, give this recipe a try. Although it is an Instant Pot recipe, you can make it work great in your crock-pot. Make your sauce and form your meatballs the night before and simply add to your crock-pot the next morning, Let them cook on low for 6 hours and they will be ready when you get home. I also cook my sweet potatoes in the crock pot to make life even easier. SImply wash your sweet potatoes, turn crock-pot on low and throw in your sweet potatoes and let cook on low 6-7 hours or on high 4-5 hours. They come out perfect every single time.

BBQ Meatball Stuffed Sweet Potatoes
Ingredients
Meatballs
- 2 lb ground beef 90/10
- 1/3 cup chopped sweet onions
- 2 tbsp coconut aminos
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp pepper
- 1 large egg
- 3 tbsp tapioca flour or sub arrowroot flour
BBQ Sauce
- 1/2 tsp garlic powder
- 1 cup Tessemae’s BBQ Sauce
- 2 tbsp coconut aminos
- 1 tsp paprika
- 1 tsp salt
- 1 tsp white wine vinegar
Stuffed Sweet Potatoes
- 3 medium sweet potatoes
Ranch Coleslaw
- 4-5 cups coleslaw mix
- 3/4 cups ranch dressing
- 1 tsp salt
- 1 tsp pepper
- 1 tsp parsley
- 1/2 tsp garlic powder
- 3 onion slices torn
Instructions
Instruction for Meatballs:
- In a large mixing bowl add the hamburger meat, egg, onions, seasonings, tapioca flour and coconut aminos. Mix and fold together with your hands until completely combined.
- Mix together the BBQ sauce. Add all ingredients to a bowl and mix together with a spoon. Set to the side.
- Set the Instant Pot to sauté.
- Once the Instant Pot is heated up, add in your meatballs to brown. This may have to be done in 2 batches.

Sweet Potatoes

This was my first time using the IP in sauté mode for a recipe (I’ve always used it for meal prepping spaghetti squash, HB eggs, etc) so I was nervous. BUT these meatballs came out delicious! I made them with some zoodles but will definitely make these again over sweet potatoes.

I browned the meatballs in a cast iron pan and then simmered them in my homemade BBQ sauce and bone broth. I served with rice and homemade ranch. They were delicious.
