Rainbow Chia Seed Pudding Bowl

Eggs, eggs and more eggs….sometimes I get so tired of eggs while living Paleo. Once a week to break up the egg cycle, I usually whip up one of these Chia Seed Fruit Bowls. The texture is thick and creamy and the fruit and coconut shreds add just enough sweetness, while the walnuts give it a crunch that makes for an overall cozy breakfast feel. This is a dairy free option with the main ingredient being almond milk.

Oatmeal has always been one of my breakfast favorites, but it left me feeling bloated and sleepy. This bowl is a great substitute and gives you the same feeling. Chia seeds are packed with protein and when they are soaked in water they transform into this magical pudding consistency.This recipe includes fresh fruit, but if you want to go crazy, try it with frozen fruit, it gives it a cereal vibe. Additionally, I love adding honey to this bowl. It makes it explode with flavor.

This sounds really strange, but the first time I tried this recipe I came to the conclusion that it tasted like Dairy Queen ice cream. My husband disagreed and acted like I was crazy, but I still swear by it. The longer I let my pudding sit in the fridge, the better it turns out. Seriously, there are so many different combinations you can make. In addition to being yummy, it is also a great meal prep option. Make a big batch on Sunday and place in mason jars and you are ready for the week.

If you are stuck in a rut and tired of eggs, then change it up and try this beautiful bowl. It is filling and leaves you completely satisfied. Not only is it delicious, but it’s dairy-free, sugar-free and Paleo approved. Eat it for breakfast, eat it for lunch or simply chill it and have it for dessert. Your whole family will love this sweet treat!

Rainbow Chia Pudding Bowl

Ingredients  

  • 1 cup almond or coconut milk
  • 3 tbsp chia seeds
  • 1 tsp organic vanilla extract
  • pinch sea salt
  • 1 whole kiwi
  • 1/4 cups raspberries
  • 2 tsp unsweetened shredded coconut
  • 1 tbsp walnuts chopped

Instructions 

  • Add chia seeds, almond milk and vanilla extract to a mason jar.
  • Shake and refrigerate over night
  • Before serving, add to a bowl and top with fruit and nuts.
