When it starts warming up outside, you better believe I crave all things salads and kale. I love getting in the kitchen and creating new recipes that keep my cravings in check. This Kale Salad with Zesty Dressing is Whole30, Keto, Paleo, gluten and dairy free.

When trying to eat healthy or completing a round of Whole30, I still strive to stick to a pretty tight budget. This salad mix is a cheap side dish option and can easily be tailored to a entree by simply adding a protein of choice.
I love using kale because it stays crispy, even when dressing is added. It also has a ton of antioxidants and vitamin c and a rich and bold earth taste.

How else can I use this dressing on Whole30, Keto and Paleo?

This dressing is extremely easy and adds so much flavor to any salad. It is also versatile and can serve as a marinade. It is a great way to add a ton of flavor to boring chicken or pork. To marinate my protein I will add my protein along with the desired amount of dressing to a gallon size Ziploc bag and marinate overnight.

Where is the cheapest place to by the compliant kale salad mix?

Recently, I have found a lot of awesome new finds at Walmart and this slaw is one of them. I always love having some kind of salad mix in my fridge, but I get really tired of the same ole spinach and arugula mix. This kale slaw mix is crispy and bursting with tons of flavor. I love to eat it cold with olive oil or I will even heat it up with some chicken apple sausage for a balanced and healthy meal.

Can I use this salad for meal prep and what’s the best way to store in the fridge so that it stays fresh?

Absolutely! I love buying a few bags of this mix to keep in the fridge for easy meal options. Sometimes I will even take a full bag with me to work and pack my dressing and slivered almonds separately and simply mix before lunch. In addition, I will bring a grilled protein and heat up and that serves as a balanced and healthy meal that is easy peasy.

Kale & Almond Salad

A crispy, zesty and clean kale and almond salad that is perfect as a side or main entree. This recipe is Whole30, Keto and Paleo compliant.
Prep Time: 5 minutes
Cook Time: 5 minutes
Servings: 3 cups

Ingredients  

Salad

  • 1 bag kale slaw mix
  • 1/4 cup sliced almonds

Zesty Dressing

  • 1/2 cup olive oil
  • 1/3 cup apple cider vinegar
  • 1 tsp lemon juice
  • 1 tsp Dijon Mustard (I use Annies, it is Whole30 compliant)
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 tbsp oregano
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions 

  • Pour the entire bag of kale slaw into a medium sized bowl.
  • In a separate bowl, add all of the ingredients for the dressing. Mix together until combined.
  • Pour all of the dressing over the kale salad and mix until all of the slaw is covered.
  • Top with slivered almonds. Enjoy!

This dressing will stay good in the fridge for up to a week.
