Current obsession…. Avocado Chili Hashbrown Toast.

1 egg
1 tablespoon chili oil
1/2 half avocado,
1 teaspoon honey
Salt and pepper
Micro greens

1. Heat a skillet over medium/high heat. Add in the chili oil along with the egg. Cook 3 minutes or until desired doneness
2. Cook the hashbrown patty in the air fryer or according to package.
3. Smash the avocado over the hashbrown and add salt and drizzle honey. Top with the chili oil fried egg and micro-greens.
4. Enjoy

❤️Brownie Hearts & Bites
1 18- ounce box brownie mix (gluten-free or regular prepared according to package
½ cup red melting candy
1/2 cup pink melting candy
1 tablespoon of coconut oil for the melting candy
Optional: Sprinkles

1.Prepare brownie batter according to package instructions Pour the brownie batter into a parchment lined 9x13 baking dish and bake according to package instructions.  3.Allow brownies to cool completely. I like to wrap mine in plastic wrap and freeze overnight before cutting. Not only do they cut easier but they are so fudgy and delish. If you don’t freeze, just make sure the brownies are cool before cutting. Use a 2-inch heart shaped cookie cutter. You can also use a 1 inch to make smaller hearts.
4.Do not throw away extra brownie pieces. Add to a bowl and press the mixture together. Roll into a ball. If it is hard rolling, add a little cream cheese to the brownies and mix together.
5.Melt the red melting chocolate according to package instructions. I always add a little coconut oil to thin it out a bit. Pour the melted chocolate into a piping bag and pipe red and pink stripes over the top of the brownies
7.Add the rolled brownies balls into any leftover chocolate. Cover with sprinkles.

These Gluten Free Firecracker Chicken Wraps are the perfect Super Bowl Appetizer. Serve over a bed of lettuce with diced tomatoes and ranch dressing for dipping sauce. These can be made in the air fryer or on the stovetop.

8-10 oz chicken, cooked and shredded
1 tablespoon oil or butter (for sauteing veggies)
1 red bell pepper, diced
1 jalapeno, diced
1 onion, diced
1 teaspoon paprika
7 gluten-free tortillas (6-inch) or regular tortillas
8 oz dairy-free or regular cream cheese
3/4 cup shredded Monterey Jack Cheese (Can sub dairy-free cheese of choice)
Salt and pepper to taste
Optional: 1/4 cup avocado oil for frying.

Sauce
1 cup Franks Hot Sauce
2 tablespoons butter (can use vegan if dairy-free)
1 teaspoon garlic powder
1/4 teaspoon ground Cayenne Pepper
1/2 teaspoon monk fruit, granulated
2 tablespoons butter or vegan butter for df
1 1/2 teaspoons coconut aminos or Worcestershire sauce

1. Heat 1 tablespoon of oil or butter in a medium skillet over medium-low heat. Sauté the bell pepper, diced jalapeno, and onions until the veggies are softened, 3 minutes.
2. Mix the sauce ingredients in a saucepan over medium heat. Heat for 3 minutes or until butter is melted.
3. Add the diced chicken, cream cheese, sauteed vegetables, and hot sauce to a bowl. Mix until everything is combined.
4. Fill each tortilla with 2-3 tablespoons of the filling. Add it to the center of a tortilla, tuck in the sides, and roll until it looks like a burrito.
5. Fry them in 1/4 cup of avocado oil for around 1-2 minutes per side or until they are crispy and golden brown. Remove to a paper towel-lined plate. OR you can air fry them at 390F for 6-9 minutes, flipping halfway through.
6. Serve with ranch or your favorite dipping sauce of your choice.
