Ingredients

  • 12 whole baby dill pickles cut in half and hollowed out
  • 12 slices bacon cut in half
  • 8 oz cream cheese softened, or dairy-free cream cheese
  • ¼ cup shredded cheddar cheese or dairy-free cheese of choice
  • 3 tbsp finely chopped green onions
  • 3 tsp ranch seasoning
  • ¼ tsp onion powder
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  • Preheat Oven: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper
  • Prepare the Pickles: Slice the baby dill pickles in half lengthwise and carefully hollow out the centers using a spoon or melon baller to remove the seeds. Set aside.
  • Make the Cream Cheese Filling: In a mixing bowl, combine the softened cream cheese, shredded cheddar, green onions, salt, pepper, onion powder, garlic powder, and ranch seasoning. Mix until smooth and well combined.
  • Pipe the Filling: Transfer the cream cheese mixture to a piping bag (or a plastic bag with the tip cut off). Pipe the filling into the hollowed-out pickle halves, filling them generously.
  • Wrap with Bacon: Wrap each stuffed pickle half with bacon securing with a toothpick if needed. Place the wrapped dates seam-side down on the prepared baking sheet.
  • Bake for 20-25 minutes, or until the bacon is crispy and the filling is warm.
  • Serve: Let the poppers cool slightly before serving. Serve warm with ranch dressing for dipping.

Notes

  • Pat the pickles dry. Use a paper towel to remove excess moisture from the pickles before stuffing to avoid them being soggy.
  • Choose the right bacon. Thin-sliced bacon crisps up more easily, while thick-cut bacon adds a heartier bite. 
  • Customize the filling to your liking. Add a little bit of heat with diced jalapeños or a sprinkle of cayenne.
  • If you have a smoker, you can take these pickle poppers to the next level by smoking them! Follow the recipe as directed, but instead of baking, place the bacon-wrapped pickles in a smoker preheated to 225°F. Smoke for 60-90 minutes, or until the bacon is crispy. This method infuses a rich, smoky flavor that’s irresistible.
